This was so yummy! It was a big hit for dinner. Next time I think that I’ll marianate the chicken for a while in the Caesar dressing/milk mixture just to give it more of that Caesar taste.

I marinated the chicken for 2 hours in lite Caesar dressing…1/2 dressing and about 1/2 water since the dressing is thick. Didn’t use milk at all. Pulled the chicken out of marinade and then dredged in the bread crumb mixture. Cheated and bought Caesar salad croutons, let air out of the bag and broken them up with a rolling pin then rolled them into crumbs. Everything else was the same as original recipe. Delicious!

I’ve made this twice and my wife loved it. The first time I followed the recipe exactly and it was good. I tweaked it a bit by following the suggestion to marinate the chicken in the dressing for about two hours. I also increased the lemon pepper to 3 teaspoons, the oregano to 2- 1/2 tsp and the garlic to 1 tsp. I liked the flavors a bit better than the first go around so my suggestion is to look at the spices listed and tweak to your tastes.

What a wonderful simple weeknight approved recipe! Only changes I made were to make smaller pieces of chicken to get even more of the yummy crunchy coating per serving. I think this chicken dish would be great on top of a salad.
