Shrimp and Okra Gumbo Recipe

Ingredients

- 2 pounds medium shrimp - peeled and deveined
- Salt and pepper to taste
- Cayenne pepper to taste
- cup olive oil
- 2 pounds chopped okra
- 1 tablespoon tomato paste
- 1 tomato, chopped
- 1 cup chopped onion
- 4 cloves garlic, minced
- cup chopped celery
- cup chopped green bell pepper
- 12 cups water
- cup chopped green onions
Directions
- Season the shrimp with salt, pepper, and cayenne to taste. Set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the chopped okra to the pot and saut for 30 minutes, stirring occasionally to prevent sticking.
- Add the tomato paste, chopped tomato, onion, minced garlic, celery, and green bell pepper. Continue sauting for another 15 minutes.
- Pour in the water and season with additional salt and pepper if desired. Bring the mixture to a boil.
- Reduce the heat to low and let it simmer for 45 minutes, allowing the flavors to meld together.
- Add the seasoned shrimp to the pot and simmer for an additional 20 minutes.
- Finally, stir in the chopped green onions and mix thoroughly before serving.
