Shrimp and Okra Gumbo Recipe

  • 2 pounds medium shrimp - peeled and deveined
  • Salt and pepper to taste
  • Cayenne pepper to taste
  • cup olive oil
  • 2 pounds chopped okra
  • 1 tablespoon tomato paste
  • 1 tomato, chopped
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • cup chopped celery
  • cup chopped green bell pepper
  • 12 cups water
  • cup chopped green onions

Directions

  1. Season the shrimp with salt, pepper, and cayenne to taste. Set aside.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the chopped okra to the pot and saut for 30 minutes, stirring occasionally to prevent sticking.
  4. Add the tomato paste, chopped tomato, onion, minced garlic, celery, and green bell pepper. Continue sauting for another 15 minutes.
  5. Pour in the water and season with additional salt and pepper if desired. Bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for 45 minutes, allowing the flavors to meld together.
  7. Add the seasoned shrimp to the pot and simmer for an additional 20 minutes.
  8. Finally, stir in the chopped green onions and mix thoroughly before serving.
