Tuscan Chicken Simmer Recipe
Ingredients
- 4 (4 ounce) boneless, skinless chicken breast halves
- 4 ounces PHILADELPHIA Cream Cheese, cubed
- cup water
- cup pesto
- 2 cups grape or cherry tomatoes
- 1 cup KRAFT Finely Shredded Italian Style Five Cheese Blend
Directions
- Heat a large nonstick skillet sprayed with cooking spray over medium-high heat. Add the chicken breasts and cover the skillet. Cook for 5 to 7 minutes on each side, or until the chicken reaches an internal temperature of 165F. Once cooked, remove the chicken from the skillet and cover to keep warm.
- In the same skillet, add the PHILADELPHIA Cream Cheese, water, pesto, and tomatoes. Cook over medium heat, uncovered, for about 2 minutes, stirring occasionally, until the ingredients are heated through.
- Return the cooked chicken breasts to the skillet and stir to coat them in the sauce. Cook for an additional 1 minute or until the chicken is fully heated and coated with the sauce.
- Sprinkle the shredded Italian cheese blend over the chicken and allow it to melt before serving.

I fell in love with Pesto after fixing this recipe! I did leave out the tomatoes because I do not like them hot. I do think the next time I fix this, I will use the frozen chicken breasts that you buy in a bag because I think they are easier to pound a little flatter.....I think it would be even better then. The calorie count shown here is not the same as on another recipe site, however. That one shows 410 per serving..... which makes more sense considering the fattening ingredients. P.S. You need to let the chicken stand at least 10 minutes in the covered skillet to let the cheese melt and soak in the sauce.

Delicious! I used sundried tomatoes instead of grape, low sodium chicken broth instead of water like others suggested. I always season my chicken with something (today I did an Italian herb/garlic themed mix). I also used chicken thighs. This was full of flavor, and I'm sure the breasts would be great too. I did sprinkle some cheese, but it honestly wasn't necessary. Made with garlic mashed potatoes and sautéed spinach. Very easy, and definitely would make this again! I forgot to take a pic, this was so good!

Followed reviewers recommendations, and doubled the sauce ingredients. Also added broccoli florets, and used milk instead of water. Served with angel hair pasta. This quick, simple dish received rave reviews from everyone in our house!

This was great, and so easy! The pesto added enough seasoning to the sauce, but I did cook the chicken in some butter and seasoned it to taste. I tried doubling the sauce per some other reviewers recommendations, and it worked but may have been a little too much sauce for how much pasta we made. Regardless, this is a keeper!

This is so good, I have found the secret to a good flavor is to buy Itallian Pesto, it makes all the difference. I like to cut the chicken into bite size pieces, I have added broccoli to the chicken as well... yumm! For those who love shrimp, this is to die for! If you use frozen shrimp, remove tails and be sure to cook the water out, don't over cook as the shrimp will get rubbery!

Who doesn't love a recipe that you can use as inspiration for the actual ingredients you have on hand?! This is definitely one of those. I cut the oversized chicken breast I had into bite-sized pieces, used whatever whipped cream cheese was left in the container, 1/2 a small jar of pesto, a ton of cherry tomatoes that were threatening to go bad on the counter, and left out of the parmesan cheese. Even the picky 8 year old went bananas for this!! Next time I will add black olives if I have them and maybe sprinkle with a little feta at the end. OMG, this is such a keeper!

We love this recipe! It is in our regular rotation. The kids call it green spaghetti & beg for it. We cut up the chicken in chunks. To thicken the sauce we use milk instead of water. Sometimes we add some karo syrup for sweetness but then add a tsp of vinegar to contrast. My husband is the one who doctors this recipe & does it by taste. We serve over angel hair pasta. Such a light refreshing taste compared to the rest of our recipes.

Maybe I would have liked this better if it wasn't called Tuscan Chicken. Tuscan Chicken brings a specific flavor profile to mind. (Garlic, Blistered or Sundried Tomatoes, Cream and Spinach... This recipe has none of those things). It's probably a great working-moms-Tuesday throw together meal that kids will like. For me... It's flavored cream cheese with chicken in it and seriously lacks flavor, depth and magic of any kind. I gave it to my neighbor and made a salad. Just yuck for me.

So simple and so yummy! I used chicken tenderloins instead of breasts and doubled the sauce. I did leave out the tomatoes as we do not eat them. My hubby (who is extremely picky) enjoyed it as well.

This just wasn't good, perhaps I didn't do something right, but there isn't a whole lot of ways to mess it up. Perhaps it was the brand of pesto. The smell alone wasn't appetizing. I only took one bite and couldn't eat anymore. My husband, who eats almost anything I make couldn't even finish his. It just wasn't a good combination.
