Lemon Pepper Chicken

Ingredients

  • 2 teaspoons lemon-pepper seasoning
  • teaspoon dried oregano
  • teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil, or as needed
  • 4 (7 ounce) boneless, skinless chicken breasts

Directions

  1. Preheat the oven to 375F (190C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine lemon-pepper, oregano, and black pepper. Pour the mixture onto a plate.
  3. Pour 1 to 2 tablespoons of avocado oil into the bottom of a skillet, just enough to coat the surface. Heat over medium-high heat until the oil shimmers.
  4. Coat both sides of the chicken breasts in the seasoning mixture and place them in the hot oil. Sear the chicken until golden brown, about 3 minutes on each side.
  5. Once seared, transfer the chicken to the prepared baking sheet.
  6. Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the chicken is no longer pink in the center and the juices run clear. An instant-read thermometer should read at least 165F (74C) when inserted into the center of the chicken.
