Chicken Cacciatore with Rice Recipe

Chicken and Rice Recipe

Ingredients

  • 3 tablespoons vegetable oil
  • 1 pounds skinless, boneless chicken breasts, cut into strips
  • cup chopped onion
  • 2 cloves garlic, minced
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 cup green bell pepper strips
  • 2 teaspoons salt
  • teaspoon dried basil
  • 1 teaspoon cayenne pepper
  • 1 cups uncooked instant rice

Directions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chicken strips, chopped onion, and minced garlic. Cook, stirring occasionally, until the chicken is browned and the onion and garlic are softened, about 8 to 10 minutes.
  3. Stir in the whole peeled tomatoes, tomato sauce, green bell pepper strips, salt, basil, and cayenne pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat and cook for 5 minutes, allowing the flavors to meld together.
  5. Add the uncooked instant rice to the pot and stir to combine. Cover the pot, remove it from the heat, and let it sit for about 5 minutes, or until the rice is tender.
  6. After the rice has cooked, fluff it with a fork and stir to combine everything before serving.

This turned out really well! I enhanced the flavor by adding Italian seasoning and pepper. The instant rice I purchased came in 1 cup bags, and the end result had a perfect consistency, not too watery but still a bit saucy; so I would suggest sticking to 1 cup. While cooking, make sure to break down the tomatoes into smaller pieces to avoid them being too large. The only other substitution I made was using red pepper flakes instead of cayenne powder, although they are essentially the same thing in different forms. You can opt for brown instant rice to make the dish slightly healthier, although it's already a fairly nutritious recipe!

I made a few modifications to the recipe by including mushrooms with the garlic and onion before adding the chicken. I also used long-grain rice, cooking it for approximately 20 minutes and stirring frequently to prevent sticking. The dish turned out wonderfully, and everyone enjoyed it. Have not tried it yet. Just curious if I can use pre-cooked rice and if yes, how much should I use? I prefer not to purchase minute or instant rice.

I followed the recipe exactly, but unfortunately, the chicken turned out to be severely overcooked and chewy. The sauce lacked flavor, tasting solely of canned tomatoes with no depth. I attempted to salvage it by incorporating balsamic vinegar and garlic salt, but we won't be trying this recipe again.

This dish is both simple and delicious. I prefer it over the traditional cacciatore. I especially enjoy having the chicken breasts sliced instead of being left whole.
