Cheesy Ham Potato Bake Recipe

Cook Time: 60 minutes

Ingredients

  • 1 (30 ounce) package frozen hash brown potatoes, thawed
  • 1 (12 ounce) package pre-cooked ham steak, diced
  • 2 cups shredded sharp Cheddar cheese, or more to taste
  • 1 onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) sour cream
  • cup butter, melted
  • Salt and ground black pepper to taste

Directions

Step 1: Gather all the ingredients and make sure you have everything on hand.

Step 2: Preheat your oven to 350F (175C). Grease a 9x13-inch baking dish to prevent sticking.

Step 3: In a large bowl, combine the thawed hash browns, diced ham, shredded cheese, chopped onion, condensed cream of chicken soup, sour cream, and melted butter. Stir the ingredients until well mixed.

Step 4: Season the mixture with salt and pepper to taste, adjusting according to your preference.

Step 5: Transfer the prepared mixture into the greased baking dish. Spread it out evenly and cover with aluminum foil.

Step 6: Place the baking dish in the preheated oven. Bake for 45 minutes to 1 hour, or until the casserole is bubbly and the cheese has melted.

Step 7: After the casserole is bubbly, remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and slightly crispy.

Recipe Tip

A great topping to add is some lightly crushed Ruffles regular potato chips. Theyll give the casserole a nice crunch. I like to serve them as a garnish to keep them from getting soggy in the casserole!

This was delicious! I cut the recipe in half and baked in an 8x8 dish as a "side", BUT if I would have known before hand how good this was going to be, I would have not cut it in half and I would have served it as the main course! I have seen similar recipes without the ham. I LOVE the addition of the ham! My daughter actually called me from school this morning asking me to heat some up and bring it to her at lunchtime. Unfortunately for her, she didn't know there weren't any left-overs. She has NEVER called me before requesting I bring her left-overs:) I will definitely be making again soon.

Delicious. To get the best out of this recipe follow these important steps. 1.) Sautee the onions in butter first to soften them. Add 1 tablespoon minced garlic for the last 30 seconds. 2.) Make sure potatoes are completely thawed (two days in the fridge). 3.) I bake at 375 for an hour because nothing is worse that a casserole with under cooked potatoes. Enjoy!

Very good! Omit the salt and cut the butter and Onion in half. I also sauteed the onion before adding it to the casserole.

My family loved this!!! I did have to make some changes due to the quarantine and making a double batch in a 13x9 pan. I used crispy crown tater tots, 16 ounces of sour cream, 1can of cheese soup, 1 can cream of chicken soup, and doubled the rest of the ingredients. Then I added the crushed Ruffles to the top for the last 15 minutes. Such a great dish for a potluck, if we ever get out of quarantine!!! Thanks for sharing this!

I did saute the onions prior to mixing in. Way too much butter! I will use 1/2 the amount next time. Otherwise, it was very good!

Made this last night for supper. Very good. There was one last minute change when I found the sour cream in the fridge was not the sour cream I thought I bought last weekend. It was sour cream bought at some point in time this year. It expired a month ago. Funny how that happens. Anyway, I found an 8 ox box of cream cheese (sort of alike, they both have cream in their names). I put the cream cheese and butter in a sauce pan over low heat and melted them together then poured over everything. Mixing was a little tough as my hash browns had frozen in a lump (note to self- let taters thaw a bit). Poured the semi mixed casserole in the baking dish and cooked for 20 min. Gave it all a stir and put it back in to finish cooking. 40 minutes later, oooey, gooey, cheesy deliciousness! YUM! The cream cheese actually gave it a twice baked potato taste. Hubby was happy, cook was happy! Can’t wait to heat up the leftovers for supper. Thank you for sharing your recipe. BTW, butter and onion amounts were right for us. Lots of flavor.

My family really loves this! I do this with 1.5 times the ingredients and double the ham for a family of five and usually have leftovers. Also I cook it for an hour covered with foil and then finish it uncovered for another 10 minutes. Definitely a keeper, I’ve made it several times!

Very easy recipe to follow. My husband loved it!! I did mine a little differently, instead of using frozen hash browns, I shredded my own potatoes and made them fresh. I used 8 oz of cream cheese instead of sour cream and a 1/4 c. of butter instead of using what it is called for. I mixed the cheese, bread crumbs in the mixture and on top of it. I baked it with the foil on for 45 mins. and uncovered for 15 mins. so the top of it would be brown. Serve it with fresh sliced tomatoes, and buttered corn. I will make it again.

Husband and kids loved this except the onion didn’t cook through. Will definitely make again but will precook the onion in the butter first before mixing all together. Also, I didn’t add extra salt as the ham and soup were enough salt.

Please don’t make this recipe without reading this. I made it exactly as written, and there are 2 huge issues with the recipe as written. First, do not thaw the frozen potatoes. You will end up with very mushy, practically mashed potatoes. Secondly, do not use the melted butter. The dish was swimming in oily liquid. The butter ruined it. The flavor was good. I believe if you leave the potatoes frozen and omit the melted butter, it would be a good dish. As written, you will have oily cheesy mashed potatoes with ham.

I made this several times now. It's an excellent recipe and easy to prepare. Last time I made this, I replaced ham with cooked sausage crumbles. Approximately 19oz worth. Fantastic. I use this for burrito filling with salsa.

I made this recipe for dinner last night. Forgot to add the sour cream but it still came out delicious. I used dehydrated onion, a little garlic powder and topped it with crushed chips as per someone else’s recommendation. It’s great. Could have actually gone a little heavier on the spices, and it did end up needing some salt at the end but really good! Going to make it again and use the sour cream and see how it is. Also, I used plain cubed frozen potatoes

5 stars!! The only modification to this recipe is replacing the cream of chicken soup with Campbells cheddar cheese soup. It adds an extra depth of creamy cheesiness!
