Brown Sugar-Pineapple Pork Chops Recipe
Grilled Pork Chops with Pineapple and Goat Cheese
Ingredients:
- 2 teaspoons chipotle chile powder
- 1 teaspoon garlic powder
- teaspoon ground cinnamon
- teaspoon onion powder
- 1 (8 ounce) can pineapple rings, drained with juice reserved
- 1 tablespoon olive oil, divided
- 1 red onion, thinly sliced
- cup brown sugar
- 4 boneless pork chops
- Salt and ground black pepper, to taste
- cup crumbled goat cheese
Directions:
- In a small bowl, combine chipotle chile powder, garlic powder, cinnamon, and onion powder.
- Pat the pineapple rings dry with paper towels.
- In a large nonstick saucepan, heat 1 teaspoon of olive oil over medium-high heat. Add the pineapple rings and red onion. Sprinkle with 3 tablespoons of reserved pineapple juice and brown sugar. Cook until the pineapple is lightly browned, about 3 minutes per side. Transfer the pineapple-onion mixture to a plate and set aside.
- Pat the pork chops dry and lightly season both sides with salt and pepper.
- In the same saucepan, heat the remaining 2 teaspoons of olive oil over medium-high heat, swirling to coat the pan. Add the pork chops and cook until the bottom is browned, about 3 minutes.
- Flip the pork chops and sprinkle the chipotle spice mixture on top. Cook the other side for about 3 minutes, or until browned.
- Continue flipping the pork chops every few minutes, cooking until the center is no longer pink. This should take about 3 to 5 more minutes. An instant-read thermometer inserted into the center should read 145F (63C).
- Transfer the cooked pork chops to a plate and top with the pineapple-onion mixture. Sprinkle with crumbled goat cheese before serving.

After searing the meat, I placed it in a large ceramic dish with the topping and baked it in the oven for 30 minutes. The dish had a bit of heat to it, and I might consider swapping the chipotle for some flavorful smoked paprika next time. The addition of goat cheese provided a unique texture and helped balance out the spiciness.

This recipe was fantastic! I will definitely be making it again. I marinated the pork chops in a simple brine of salt, water, and brown sugar for a few hours. These were absolutely fantastic. I didn't have chipotle chili pepper on hand, so I substituted with smoky paprika and a hint of chili powder and cayenne pepper. I stuck to the recipe besides that adjustment. I served them with Jasmine rice infused with coconut milk, pineapple chunks, a squeeze of fresh lime juice, and a touch of cilantro. The flavors paired beautifully with the chops. This recipe is definitely a keeper. My husband thoroughly enjoyed it too.

Created using pork tenderloin - incredible! Substituted feta for goat cheese and paprika for chipotle chili powder. My family absolutely enjoyed it!

I found this recipe to be incredibly delicious! I stuck to the instructions and the pork chops turned out perfectly juicy and flavorful. The combination of pineapple with the meat was a great match, and I will definitely be making this dish again. The generous amount of onion added a nice depth of flavor, which I personally enjoyed. However, I accidentally used cayenne pepper instead of chipotle, and it turned out much spicier than I had anticipated. This could be a positive or negative depending on your spice tolerance. For my next attempt, I will make sure to use chipotle pepper and see how it alters the taste.

My family absolutely loved this meal! I opted not to use chipotle chili pepper since we're not big fans of spicy food, but I substituted it with cayenne pepper. I also added a dash of paprika and basil to enhance the flavors. I omitted the goat cheese as it's not to our liking. To accompany the dish, I made crispy fried potatoes and corn on the cob. Overall, this dish was a hit and I look forward to making it again!

Great! This one pan recipe is quick and easy to make. I added extra pineapple juice because 3 tablespoons wasn't enough for four chops. I enjoyed the seasonings, but I only used half the amount of chili powder to suit my preference for milder heat.
