Substituted onion powder for onion flakes in the recipe but otherwise followed it exactly. I did make a modification by creating a topping with 1 tablespoon each of ketchup, mustard, and Open Pit BBQ sauce, then spreading it over the meatloaf before baking. I also sprinkled sharp cheddar over the top in the final 10 minutes of baking. This recipe was incredibly easy to make - even a 79-year-old like me could do it - and the result was fantastic!

I had an amazing experience with this recipe! It was incredibly easy to make, and even my picky eaters enjoyed it, along with my husband. I followed the recipe exactly, except I used flavored crackers - rosemary and sage - since that's all I had on hand, and it turned out to be incredible! My kids had fun crushing the crackers. I also substituted egg beaters, and it didn't make a difference in the taste. Instead of a large baking tin, I used two cupcake tins, and the individual servings turned out perfect. I recommend freezing the leftovers - my kids even made meatball subs out of one serving with ease! I served it with cheddar mashed potatoes. Trust me, double the recipe because it will disappear quickly! And make sure to use RO-TEL tomatoes!

Both my choosy child and my husband absolutely adore this dish. I have prepared it using both beef and ground turkey, and it turned out delicious each time. I substitute crumbled crackers with plain panko breadcrumbs, and I also add a homemade sauce on top (made with about a 1/3 cup or more of ketchup, mixed with a few tablespoons of mustard, and around 2 tablespoons of brown sugar, all blended well and poured over before baking).
