Brussels Sprouts with Bacon and Balsamic Recipe

- 2 pounds Brussels sprouts, trimmed and halved lengthwise
- 6 slices bacon, or more to taste, thinly sliced
- 1 pinch salt and ground black pepper, to taste
- cup reduced balsamic vinegar, divided
Directions
Follow these simple steps to prepare this delicious dish:
- Step 1: In a large cast iron skillet, combine the Brussels sprouts and bacon. Season with salt and pepper to taste.
- Step 2: Cook over medium heat, stirring occasionally, until the Brussels sprouts begin to brown, about 15 to 20 minutes.
- Step 3: Drizzle cup of balsamic vinegar over the Brussels sprouts and bacon mixture, stirring to combine.
- Step 4: Transfer the Brussels sprouts and bacon to a serving platter.
- Step 5: Drizzle the remaining balsamic vinegar over the top before serving.
Recipe Tip
If you prefer, you can also roast the Brussels sprouts and bacon. Preheat your oven to 425F (220C) and roast for 20 to 30 minutes until tender and caramelized.

I absolutely adore roasted Brussel Sprouts, and this sautéed rendition with Bacon and Balsamic is simply divine. I decided to enhance the dish by sprinkling in approximately 2 tablespoons of dried Cranberries when adding the Vinegar, allowing them to rehydrate with the heat off and lid sealed for a few moments before serving. Delightful!

I have a few reflections on preparing this recipe, including both regrets and a recommended adjustment. I decided to enhance the recipe by incorporating two finely chopped rings of white onion into the bacon. However, looking back, I realize that adding more liquid – perhaps some olive oil – would have been beneficial to increase the moisture level. In hindsight, covering the dish with foil could have also helped. Additionally, I opted for the oven method but now believe that utilizing the stove top method might have been more effective.

I used red wine vinegar instead of balsamic as I didn't have any on hand, and it turned out to be the best recipe I've ever tried. I've already made it three times and there were no leftovers. Make sure not to skip the vinegar as it is crucial to the dish.

I have a fondness for Brussels sprouts, while my husband just puts up with them. This recipe was simple to follow, but didn't quite hit the mark for us. Despite extending the cooking time slightly, the sprouts didn't reach the desired level of tenderness we prefer. Would I give it another go? Perhaps during the summer months when I prefer not to use the oven.
