Irish Champ Recipe
Original Recipe Yield: 4 servings
Ingredients
- 2 pounds potatoes, peeled and halved
- 1 cup milk
- 1 bunch green onions, thinly sliced
- cup butter, cut into pieces
- teaspoon salt, or to taste
- Freshly ground black pepper, to taste
Directions
Step 1: Place potatoes into a large pot and cover with salted water. Bring to a boil. Reduce the heat to medium-low and simmer until potatoes are tender, about 20 minutes.
Step 2: Drain the potatoes well, then return them to the pot and cover with a clean dish towel. Place the pot over very low heat for 2 to 3 minutes, allowing the potatoes to dry out.
Step 3: Meanwhile, heat the milk and green onions in a saucepan over medium-low heat for 3 to 4 minutes until warmed through.
Step 4: Once the potatoes are dry, add the butter and salt. Mash the potatoes with a potato masher until smooth.
Step 5: Stir in the warm milk and green onion mixture until well combined. Season with freshly ground black pepper to taste. Serve warm.

Born in your native city of Belfast I grew up on Champ. One one thing missing from this recipe which would make it an "authentic" champ is the addition of one or two raw eggs mixed into the mash along with the milk,butter and scallions. Without that it is just mashed potatoe with milk , butter and scallions. Try the REAL Belfast champ by adding raw eggs.

I sauteed the onions in a little of the butter, adding a big handful of fresh chopped parsley to the frying pan. Parsley may not be authentic, but I definitely thought it was tasty. Delish with our corned beef dinner, and festive looking with all the green.

I freakin LOVE champ! I was taught to melt the butter then add cream and green onions to "steep", though. ALSO I love to add a bit of cornstarch and fry these as patties to make CHAMPCAKES! MMMmmmMMMMM!!!

I just made this for supper for St Patrick's Day. Husband and I liked these potatoes very much! I used Idaho and red potatoes and left the skin on. I also added a little garlic in addition to the salt and pepper for seasoning. The green onions add a nice touch, in both taste and colour. I'll be making this again!

I never would have thought that just adding scallions to mashed potatoes would make them so delicious! I used gold potatoes and a bit of garlic powder, and did top with more butter before serving. I can see adding a little of what other reviewers suggested as well (cream cheese, sour cream, egg). I'm a little late for St Patty's Day, but this is delicious and has a spring-like taste to it. Thanks for the great recipe, Ita! UPDATE 12/25/16: This time I did not peel the Yukon gold potatoes, and I really liked it that way. I also added some plain Greek yogurt that I had to use up (works like sour cream or the cream cheese). Great!

We loved these! I did not half my potatoes but diced them into small pieces. They cook faster and are easier to mash. Thanks for the recipe.

Simple, simple, simple. The way it should be. The green onions really make the dish, as does good butter and plenty of salt. I soft-boiled an egg (5 minutes in boiling water) for each person and served it on top of the champ for breakfast.

My mother was from county Roscommon Ireland. And made Champ regularly for us, but she always used buttermilk instead of milk.

It's the real stuff! (I'm Irish). Make a depression in the top and add a chunk of butter. You could put grated cheese on top and grill (broil) and crumble crispy bacon over it. It's not champ any more but its nice.

This was perfect served with corned beef and cabbage last night for Saint Patty's Day! I used less green onions and added fresh parsley and "real" bacon bits. Also stirred in sour cream to make it creamier. I'd be very interested in adding an egg next time as the most popular reviewer stated. FYI: You'd only need to add shredded cheddar cheese to make this Loaded mashed potatoes ;-)

I have never heated milk ahead of adding it to mashed potatoes. I thought it really improved the creaminess of the mash. Of course, love the addition of green onion in the heating of the milk. Wasn't overpowering oniony at all! I Always do colcannon at this time of year with cabbage but will make these again!

Super yummy! Creamy potatoes punctuated with a bit of sharpness from the green onions is a great, natural pairing. Even though they’re Irish, we served them alongside some curried chicken and zucchini, which was delish. Can’t wait to turn the leftovers into potato pancakes to top with smoked salmon and greek yogurt!

This was nice for a change of pace. We agreed that it was better with butter and more salt and pepper. Garlic would be good in it. We served with grilled pork chops. Thanks for sharing your recipe!

I am not a mashed potato cooking expert but these were easy. I did add the egg which made them a bit more goopy so cooked a couple minutes more. Next time I would use less green onions as my dish was a bit strong.

Great recipe. I used gold potatoes and cream instead of milk, and my family said they could eat them everyday with nothing else but a little butter on top
