Tender Potato Biscuits Recipe
Ingredients

- 2 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- cup sugar
- cup butter or margarine
- 1 cups leftover mashed potatoes
- 1 egg, beaten
- cup cold water
- cup milk
- 2 tablespoons milk, or as needed
Directions
Step 1: Preheat the oven to 450F (230C). Line a baking sheet with parchment paper.
Step 2: In a medium bowl, stir together the flour, baking powder, salt, and sugar.
Step 3: Cut in the butter until the pieces are no larger than peas.
Step 4: Use a fork to stir in the mashed potatoes, breaking them into chunks.
Step 5: Make a well in the center of the mixture, then pour in the egg, cold water, and milk.
Step 6: Stir everything together into a loose dough using the fork.
Step 7: Turn the dough out onto a floured surface and knead it 6 to 8 times until it holds together.
Step 8: Pat the dough out to about inch thickness and use a biscuit cutter or drinking glass to cut it into circles.
Step 9: Place the biscuits onto the prepared baking sheet.
Step 10: Brush the tops of the biscuits with 2 tablespoons of milk.
Step 11: Bake for 15 to 20 minutes, or until the bottoms are golden brown.
