Grandmother's Pork Chop Dinner Recipe

- pound bacon
- 4 pork chops
- 3 medium potatoes, peeled and sliced thick
- 1 medium onion, sliced
- 1 cup water
- Salt and pepper, to taste
Directions
Step 1: In a large, deep skillet over medium-high heat, cook the bacon. Turn occasionally until it is cooked through but not crispy, about 6 minutes. Remove the bacon and place it on a paper towel-lined plate, leaving the bacon grease in the skillet.
Step 2: Using the reserved bacon grease, sear the pork chops over medium-high heat until browned, about 2-3 minutes per side. While the pork chops are cooking, chop the bacon into small pieces.
Step 3: Add the sliced potatoes and onion to the skillet, then sprinkle in the chopped bacon. Pour in 1 cup of water, cover the skillet, and bring it to a gentle boil over medium heat.
Step 4: Reduce the heat to a simmer and cook until the potatoes are tender, approximately 30 minutes. Season with salt and pepper to taste before serving.
