Pasta with Peas and Sausage
Ingredients
- 1 pound rigatoni pasta
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 pound sweet Italian sausage, casings removed
- 12 ounces frozen green peas
- 1 cups heavy cream
- 4 tablespoons butter
- 2 tablespoons grated Parmesan cheese
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta and set aside.
Step 2: While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and saut for about 1 minute until fragrant.
Step 3: Add the sausage to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
Step 4: Stir in the frozen peas and simmer for 5 minutes, allowing the peas to heat through.
Step 5: Slowly pour in the heavy cream and add the butter. Bring the mixture to a slight boil, then reduce the heat and simmer for an additional 5 minutes. Add more cream if needed to reach your desired consistency.
Step 6: Toss the cooked rigatoni pasta into the skillet with the sauce, mixing until the pasta is well coated.
Step 7: Serve the pasta topped with freshly grated Parmesan cheese.

yummy LOW FAT sub: white sauce with 1% milk. Heat 2 Tbsp butter, 2 Tbsp of flour and stir on low heat. Add 1 c of milk slowly. It's creamy enough. We also added shrimp at the end and it was very tasty.

Overall very tasty and easy recipe, but I did make some modifications and I do think I will be making a few more in the future. Right off the bat I used Impossible sausage instead of real sausage because I'm vegetarian, but they usually cook extremely similarly and the sausage turned out fine so I'm sure that didn't really impact much. What I didn't like was that there was no other seasoning besides the garlic and whatever is in the sausage, so I added a good amount of fresh cracked pepper and sea salt to liven it up a little. In my opinion it really could have done with some lemon and herbs too, maybe sage, so I'll be trying that next time. Another thing I noticed was that the sauce was extremely thick and fatty, borderline oily with all the butter and cream. I think next time I will go with another review's suggestion and do bechamel instead of cream. Lastly, the directions say to add the butter to the sauce at the same time as the cream and then bring it to a boil, but I found it started to break when I did that - I think the butter is probably best stirred in at the end after reducing the heat to prevent it from forming an oily layer on top. All in all though, it was still a very tasty meal even if it was quite rich. I will be making it again with these adjustments.

Delicious but made a few slight changes. I added a shallot with the garlic. then I added black pepper and cayenne pepper to the sausage mix. I stirred in some of the parm cheese into the sauce.

Easy Peasy! Great recipe for beginner cooks just breaking into the pasta scene. I thought the sauce on this recipe was a little loose, so I stirred the parmesan into mixture rather than putting on top of the finished dish. Additionally, my tastebuds said it needed a bit of freshness and flavor, so I added a sprinkle of fresh chopped parsley and then hand grated a touch of parmesan on top. Finally, a couple of shakes of crushed red pepper and dinner served.

This recipe was super easy. i used bulk mild italian sausage (next time I would use hot). I added some red pepper flakes while cooking the sausage. The sauce seemed thin at first but thickened up as it sat. i finished the dish with some fresh basil from my garden and fresh grated parm! My adult kids devoured the pot (and they hate peas). YUM!!!

I can't believe how good this was for such a simple dish! To keep it lower-cal, I used sweet Italian turkey sausage and half-n-half instead of heavy cream. I added a few sprinkles of pepper flakes and about 1/4 cup of pasta water when the sauce got too thick. Per others' suggestion, I topped w/ chopped fresh basil... soooo good!

Very tasty! I'll definitely be making this again. I used ground italian sausage and drained it a bit. Trimmed quite a few of the calories by omitting the oil and most of the butter, using 1C. cream and 1/2C. lowfat milk (thickened it with a little flour). Then served it over zoodles.

A simple recipe the family loved with a couple of modifications. I eliminated the butter, added extra parmesan cheese and used 1/2 and 1/2 instead of heavy cream. Thickened up nicely.

Very good. Used 4 cups brown rice penne pasta, 1 cup half and half, and added extra Parmesan cheese to the sauce. Was perfectly creamy. Look forward to trying it with hot sausage next time! Yum! 7/24 made with heavy cream and hot sausage this time. Loved the hot sausage but prefer the half and half to cream.

I did add about 1/4 cup chopped onion along with the garlic while the sausage was browning. Omitted the oil. Added 2 tablespoons Parmesan cheese to sauce and also sprinkled more on top after plated. Delicious.

Changed it up a bit and it was yummy! I sautéed a chopped Vidalia onion added the garlic and a cup of wine. I let it the wine reduce, then added the sausage. I used half and half instead of heavy cream. I also added a 1 1/2 cup of tomato sauce. Let everyone top their dishes with additional freshly grated Parmesan.

Substitutes I made using what I had on hand that worked out great: 1. Substituted milk and butter for the heavy cream (1/4 cup butter + 3/4 cup milk instead of 1 cup heavy cream) and that worked really well. Next time for a healthier alternative will try greek yogurt and milk (50/50 mix) as substitute for heavy cream! 2. Used chicken and kale sausage instead of italian sweet sausage...great light flavor. 3. Added Prima Donna Black cheese as substitute for parmesan cheese—subtle taste shift and wonderful! 4. Added a bit of nutmeg to taste to sauce mixture at the very end of simmer. Yum! 5. Garnished with fresh basil leaves, but next time would certainly add a bit more coursely cut...really nice.
