Ingredients (6 servings)
- 1 cup thinly sliced scallions
- 1/4 cup drained, chopped sun-dried tomatoes in oil
- 1 tablespoon finely chopped fresh garlic
- 1 teaspoon dried oregano
- 1 (16-ounce) package frozen chopped spinach
- 3 cups vegetable broth
- 1 1/2 cups uncooked long-grain white rice
- 1 1/2 teaspoons grated lemon zest
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- 6 ounces feta cheese, crumbled (about 1 1/2 cups), divided
- 1/2 cup chopped fresh dill
Directions
Step 1: Gather all ingredients and preheat the oven to 425F (190C).
Step 2: Heat oil in a large ovenproof skillet over medium-high heat. Add the sliced scallions, chopped sun-dried tomatoes, garlic, and oregano. Cook, stirring frequently, until the scallions soften, about 2 minutes.
Step 3: Add the frozen spinach and cook, stirring occasionally, until thawed, about 5-6 minutes.
Step 4: Stir in the vegetable broth, uncooked rice, lemon zest and juice, kosher salt, black pepper, and 1 cup of crumbled feta cheese. Bring the mixture to a simmer over high heat, stirring occasionally.
Step 5: Stir in the fresh dill and top the dish evenly with the remaining 1/2 cup of crumbled feta.
Step 6: Transfer the skillet to the preheated oven and bake until the rice is tender and the feta begins to brown, about 20 minutes.

The flavors in this recipe are amazing! I'm giving it 3 stars because I feel that the instructions weren't clear. I didn't know to cover the dish while it's cooking, so the rice never fully cooked. We had crunchy rice! If the instructions were clearer & the rice had been tender, this would get 5 stars.
