Smoked Mozzarella Skillet Chicken Recipe
Ingredients
- 4 skinless, boneless chicken breasts
- 2 teaspoons dried oregano
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 (8 ounce) package smoked mozzarella cheese, thinly sliced
Directions
Step 1: Place chicken breasts on a flat surface and cover them with waxed paper. Using the smooth side of a meat mallet, gently pound each breast to an even thickness. Sprinkle both sides of the chicken with oregano, onion powder, and salt.
Step 2: Heat the olive oil in a large cast-iron skillet over medium heat. Once the oil is hot, add the chicken breasts and cook for about 4 minutes on one side.
Step 3: Flip the chicken breasts over and cook for an additional 3 minutes. Then, top each breast with slices of smoked mozzarella cheese.
Step 4: Cover the skillet with a lid and continue cooking for another 2 to 3 minutes, or until the cheese has melted and the chicken is fully cooked. The chicken should no longer be pink in the center, and the juices should run clear. You can check the internal temperature using an instant-read thermometer - it should read at least 165F (74C).
Step 5: Transfer the chicken breasts to plates and allow them to cool for about 1 minute before serving.

I smoke my own cheese and was looking for ways to use up the mozzarella. This was very tasty! I might change up the seasonings next time. To note: I used way less cheese than called for. I'm a huge cheese lover, but a whole block of cheese on 4 breasts was a bit much. Also, depending on the size of your chicken breasts, you might have to cook them a few extra minutes. Few ingredients and great flavor for a simple weekday meal.

I ended up not being able to find smoked mozzarella in the grocery store, so used smoked gouda instead. Was pretty good, if rather one-note in terms of flavor. Not entirely healthy or innovative, but can't deny you can't go much wrong with cheese.

We had a lot of extra mozzarella cheese, so I was looking for a simple recipe to use some of it up. Found this recipe for smoked mozzarella, which I did not have. Even so, I made it with plain mozzarella – and it was GOOD! The probability would have been better with smoked mozzarella. Would I serve it to guests? Not likely, but for an everyday meal, it is easy and tasty.

I did not change a thing except the rest time after cooking. Any meat/chicken that is that thin needs no rest time to distribute any juices. Get on the table and a minute will pass before the drinks are poured. I will make this recipe again very soon.

For easiness and fastness this recipe wins all over the place. Will make it again and will try it with regular mozzarella or provolone to make up for those days when I may not have the smoked mozzarella!

Very easy to make and the smoked mozzarella was delicious. Served it with twice baked potatoes and a spinach salad. Very quick.
