Easiest way to peel a butternut squash: - Lay on side - Cut into two halves, separating the "large ball" at the bottom from the "tube" at the top. - Cut the bottom from the large ball so you have two parallel flat surfaces. Stand the ball on one flat face. Cut slices of skin off, from top to bottom, following the contour of the ball as you make each cut. - Cut the top from the tube. Stand on one flat end. Cut slices of skin, from top to bottom. - Only after both pieces are peeled - cut each half in half (top to bottom) to expose seeds, which you scrape out and discard.

Loved the recipe. Cooked it 30 minutes then added fresh cranberries for 5 more minutes. Sauted cubed tart apple lightly in butter with cinnamon and brown sugar. Mixed together Makes a very pretty festive side dish for the holidays

I looked up the recipe for the cooking time. We like both savory and sweet preparations of butternut, and this time we did sweet -- melted 2 TBS bacon fat, tossed the squash in it, crushed 2 tsp coriander seeds and tossed again with pink salt to taste, placed on baking sheet, sprinkled 1/4 c brown sugar on top, and waited. Melt in your mouth with a kind of toffee quality from the sugar, and the coriander really made it stand out for us.

We often roast butternut squash. The we carmelize red onions, and sprinkle over top with crumbled feta cheese. For us, good warm or cold.

I used cumin, onion powder,chili seasoning , garlic powder, salt, and pepper. After roasting I blended and added chicken broth for a delicious soup

Does anyone else just scrub the squash and leave the skin on? It was great this way just left skin side down and did skim pieces an extra 5 minutes or so. Skin became soft and delicious.

Really simple, delicious and nutritious! I doubled the recipe. I cut it up before roasting it, as it gives those flavors a chance to meld with the squash. Even though cutting it takes time, it is still easy to do. Because I was making turkey tenderloins in the oven, too, these cooked instead for an hour at 325. Toward the end of that hour, I raised the temp to 400 both times finish the turkey and the squash, but the squash got an extra 5 to 10 minutes at that temp. My whole family liked the squash, except for my youngest. (In the future I will need to hold some squash back to prepare like sweet potatoes for her.)

Very easy and simple as directed. My only addition was I added the juice of half a freshly squeezed lemon, drizzled with honey for extra sweetness and topped with sour cream. Agreed easy to see as a meal itself and will do again maybe adding some nutmeg.

Quick and easy, though I did end up tossing it under the broiler for a few minutes at thee end to get it to brown up a little. I think next time I would add maybe a touch of brown sugar and some rosemary- parmesan would be a nice touch too. But good as written as well!

I couldn’t leave well enough alone and added about a quarter cup of diced pancetta. I threw it all into a pan with cooked fresh linguine with a table spoon of butter with about a 1/2 cup of pasta water. I hate to watch my sage plant not get used so I fried some whole leaves in olive oil as a crunchy garnish. I might throw in toasted Pine nuts next time.

Made this recipe as the first time making butternut squash for my family. I did add a garlic parmesan seasoning. My 15 yo is ok with some vegetables but is pretty picky about them. She just took one bite and immediately asked if she could have it for lunch one day. She definitely loves it! My only regret is we didn’t have more!

Very simple to make, especially after reading how to cut and peel the squash! I used granulated garlic powder and some dried thyme and pineapple sage in addition to the required OO and S & P. It was delicious! Will definitely make again.
