Grilled Cajun Cod Fillets

Ingredients

  • 2 (8 ounce) cod fillets, cut in half
  • 1 tablespoon Cajun seasoning
  • teaspoon lemon pepper
  • teaspoon salt
  • teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 lemon, juiced
  • 2 tablespoons chopped green onion (white part only)

Directions

Step 1: Gather all ingredients and prepare them for cooking.

Step 2: Stack about 15 charcoal briquettes into a pyramid shape on the grill. If preferred, drizzle the coals lightly with lighter fluid, allowing them to soak for 1 minute. Then light the coals with a match. Let the fire spread evenly across the coals for approximately 10 minutes before spreading them out across the grill. Allow the coals to burn until they are covered with a thin layer of white ash. Lightly oil the grates.

Step 3: Season both sides of the cod fillets with Cajun seasoning, lemon pepper, salt, and black pepper. Set the fillets aside on a plate while you prepare the butter mixture.

Step 4: In a small saucepan, melt the butter over medium heat. Stir in the lemon juice and chopped green onions, cooking for about 3 minutes until the onions soften and the mixture becomes aromatic.

Step 5: Place the seasoned cod fillets on the preheated grill. Grill them for about 3 minutes per side, or until they are browned and flaky. While grilling, baste the fillets frequently with the butter mixture to enhance flavor.

Step 6: Once the cod fillets are fully cooked, remove them from the grill and let them rest off the heat for about 5 minutes before serving.

Step 7: Serve the grilled cod fillets with your favorite sides, and enjoy your meal!

This recipe is simply amazing! My family is following a low-fat, low-salt diet, so we made some modifications by using lemon-herb seasoning, extra pepper, and eliminating salt. I modified this recipe by using a gas grill and omitting the cayenne pepper. I portioned out 3 lbs of cod into individual servings, wrapping each in heavy-duty foil, and cooked them on medium heat for around 40 minutes. I decided to use frozen cod for this recipe. Once it was thawed, I dry marinated it with a mix of lemon pepper and Old Bay seasoning, letting it sit in the fridge for 3 hours. Excellent Cod recipe! I utilized Tony Chachere Creole Seasoning, lemon wedges, and additional pepper as a substitute for lemon pepper. I also drizzled some melted butter and dubbed it "Poor Man's Lobster!" Opted for Icelandic Cod from the fresh seafood section.

I used Tony Chachere's seasoning and found it to be too salty. Nevertheless, we still enjoyed all the dishes. I'll use less salt next time.
