Grilled Skirt Steak with Roasted Potatoes
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. Original recipe (1X) yields 4 servings:
- cup ketchup
- 2 tablespoons Worcestershire sauce
- 4 cloves garlic, minced, divided
- 2 teaspoons salt, divided
- 1 teaspoon ground black pepper, divided
- 1 pound skirt steak
- 4 russet potatoes, diced small
- 2 tablespoons extra-virgin olive oil, or more to taste
Directions
- In a small dish or resealable plastic bag, combine ketchup, Worcestershire sauce, 2 cloves garlic, 1 teaspoon salt, and teaspoon pepper. Mix thoroughly and add the steak. Let it marinate for at least 30 minutes, or up to 2 days in advance for more flavor.
- In a separate bowl, mix the remaining 2 cloves garlic, 1 teaspoon salt, teaspoon pepper, and olive oil. Add the diced potatoes and stir until the potatoes are evenly coated.
- Transfer the seasoned potatoes to a grill pan. Place the pan into the Panasonic Countertop Induction Oven. Select the "Auto Cook" function, set it to setting 4 (12-inch size), and press "Start." Cook for 15 minutes.
- After 15 minutes, stir the potatoes and return the pan to the oven. Set the timer for an additional 5 minutes and press "Start" to continue cooking.
- Once the potatoes are done, transfer them to a serving plate and set aside.
- Preheat the oven to High on the "Grill" setting. While it heats, wipe off any excess garlic from the grill pan with a paper towel.
- Remove the steak from the marinade and place it in the preheated grill pan. Grill each side for 1 minute.
- Once grilled, remove the steak and let it rest for 3 minutes to lock in the juices.
- Slice the steak against the grain and serve alongside the roasted potatoes.
Cook's Notes
You can marinate the steaks for up to 2 days in advance. Adjust grilling times based on your preferred level of doneness. The times given are for medium-rare to medium doneness.

I haven't used the Panasonic Induction oven, but I cooked meat on the grill side of a griddle on the stovetop and it turned out delicious.

This dish is perfect for a quick and delicious meal. I added some fresh parsley to the potatoes since I had some to spare, but followed the rest of the recipe as instructed. My family really liked it!
