Cook Time: 960 minutes

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

Original recipe (1X) yields 16 servings

  • 1 cup firmly packed brown sugar
  • cup honey
  • cup molasses (Optional)
  • cup orange juice
  • 2 teaspoons Dijon mustard
  • 1 (10 to 12 pound) ham shank

Directions

  1. Blend brown sugar, honey, molasses, orange juice, and mustard together in a saucepan over medium-low heat. Stir the mixture until it thickens, which should take about 45 minutes.
  2. Remove the saucepan from heat and allow the glaze to sit, allowing the flavors to blend. Let it rest for at least 8 hours, or preferably overnight.
  3. Preheat your oven to 225F (110C). Place the ham in a roasting pan.
  4. Bake the ham in the preheated oven, checking occasionally. The ham should cook for approximately 10 hours. If it begins to darken, cover it with aluminum foil.
  5. Continue baking for an additional 2 hours. After that, increase the oven temperature to 275F (135C) and bake for 2 more hours, coating the ham thoroughly with the glaze mixture every 30 minutes.
  6. Once finished, remove the ham from the oven and let it stand for 15 to 20 minutes before slicing. Serve any remaining glaze with the ham, if desired.
