Chicken Bombs Recipe

Ingredients
- 1 (8 ounce) package cream cheese, softened
- cup finely chopped green onion, or to taste
- 1 jalapeno pepper, finely chopped
- Salt and ground black pepper to taste
- 8 chicken tenders
- 8 slices bacon
- 8 toothpicks
- 6 tablespoons pepper jelly
Directions
- Preheat the oven to 400F (200C). Place a wire rack on top of a baking sheet.
- In a bowl, combine the cream cheese, chopped green onion, jalapeno pepper, salt, and black pepper. Mix until well incorporated.
- Use the flat side of a meat tenderizer to gently pound the chicken tenders into a rectangular shape.
- Place approximately 3 tablespoons of the cream cheese mixture in the center of each chicken tender, then fold the chicken over the filling to form a pouch.
- Wrap each pouch with a slice of bacon and secure with a toothpick to hold everything together.
- Top each bacon-wrapped chicken pouch with a spoonful of pepper jelly.
- Arrange the prepared chicken pouches on the wire rack in a single layer.
- Bake in the preheated oven for about 35 minutes, or until the bacon becomes crispy and the chicken is fully cooked with clear juices.
Cooks Note
For a spicier dish, leave the membranes of the jalapeno pepper intact before chopping. This will increase the heat of the recipe.
