Ingredients

  • 1 bunch broccoli rabe, ends trimmed
  • 2 tablespoons olive oil, divided
  • 1 clove garlic, very thinly sliced
  • teaspoon red pepper flakes
  • 3 tablespoons water
  • teaspoon kosher salt

Directions

Step 1: Begin by cutting the thick, lower stems of the broccoli rabe and peeling them. Set aside the florets and leaves for later use.

Step 2: Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil, the sliced garlic, and red pepper flakes. Saut until the garlic becomes fragrant, about 45 seconds.

Step 3: Add the prepared stems to the skillet and saut them for another 45 seconds, ensuring they are evenly coated with the oil.

Step 4: Pour in the water and continue cooking, allowing the stems to soften for 3 to 4 minutes.

Step 5: Stir in the broccoli rabe florets, leaves, and kosher salt. Cover the skillet and cook for an additional 5 minutes, or until everything is tender.

Step 6: Transfer the cooked broccoli rabe and its juices into a serving bowl. Drizzle with the remaining tablespoon of olive oil for extra richness and flavor.

This recipe for broccoli rabe is fantastic - no blanching required. The only modifications I made were using a generous amount of minced garlic - 9 cloves to be exact - and adding in some pine nuts. The result was absolutely delicious!
