  • 1 pound bulk Italian sausage
  • 1 pound skinless, boneless chicken thighs, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil, divided
  • 1 pound cremini mushrooms, quartered
  • 1 onion, chopped
  • 1 red bell pepper, cut into 3/4-inch pieces
  • 1 green bell pepper, cut into 3/4-inch pieces
  • 3 cloves garlic, minced
  • 1 1/2 pounds russet potatoes, scrubbed and cubed into 1/2-inch pieces
  • 1 cup dry white wine
  • 1 cup reduced-sodium chicken broth
  • 1/4 cup brine from Peppadew peppers
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 1 cup Peppadew peppers, halved
  • Chopped fresh Italian parsley

Directions

  1. Gather all ingredients.
  2. In a 5- to 6-quart Dutch oven, cook sausage over medium heat until browned, 6 to 8 minutes. Transfer sausage to a bowl using a slotted spoon.
  3. Place flour on a shallow plate. Dredge chicken pieces in flour, coating them evenly.
  4. Heat 1 tablespoon of oil in the Dutch oven. Add chicken and cook until lightly browned, about 4 to 5 minutes. Transfer chicken to the same bowl with the sausage.
  5. Add the remaining tablespoon of oil to the Dutch oven. Add mushrooms, onion, and bell peppers. Cook until tender, about 6 to 8 minutes.
  6. Stir in garlic and cook for 1 minute until fragrant.
  7. Stir in potatoes, white wine, chicken broth, brine, Italian seasoning, and salt. Bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer for about 10 minutes, or until potatoes are tender.
  8. Add Peppadew peppers and the browned chicken and sausage. Stir and cook for about 3 minutes until the dish is heated through and the sauce thickens slightly.
  9. Sprinkle with chopped parsley before serving.

Chicken Murphy Recipe

Chicken Murphy is a comforting, hearty one-pot meal that combines the flavors of tender chicken, spicy sausage, savory mushrooms, peppers, and potatoes in a rich white wine sauce. Known for its bold flavors and simple preparation, this dish is a great choice for a weeknight dinner or a casual gathering.

History of Chicken Murphy

The origin of Chicken Murphy is somewhat unclear, though it is often associated with the Italian-American cuisine of the northeastern United States, particularly in regions with a strong Italian influence such as New Jersey and New York. The dish combines elements of traditional Italian cooking, like sausage, chicken, and peppers, with a robust sauce. The name "Murphy" is thought to be a reference to an Irish-American influence, though some believe it may be named after a local family or restaurant in New Jersey. Its a perfect example of how immigrant communities adapted their culinary traditions to the local ingredients and tastes of America, creating a unique fusion dish.

Regional Variations and Specialties

While Chicken Murphy is most commonly found in Italian-American households, it has several regional variations depending on the ingredients available and personal preferences. For instance, in some versions, spicy cherry peppers or Peppadew peppers are used, while others may opt for bell peppers or different types of hot peppers. The dish is often served with pasta in some regions, while in others, it is paired with crusty bread or rice to soak up the delicious sauce. Additionally, variations may include adding different herbs, such as basil or oregano, or substituting other meats like pork for the sausage.

How Chicken Murphy Differs from Similar Dishes

Chicken Murphy is similar to other Italian-American dishes like Chicken Scarpariello or Chicken Cacciatore. However, what sets Chicken Murphy apart is its unique combination of sweet and spicy elements, especially the use of Peppadew or hot cherry peppers. While Chicken Scarpariello often includes vinegar for acidity, Chicken Murphys flavor profile is enhanced by a rich white wine sauce, making it a bit smoother and less tangy. Additionally, the incorporation of potatoes into the dish gives it a heartier, more filling texture compared to other poultry-based Italian dishes, which are usually served with pasta or rice.

Where Chicken Murphy is Typically Served

Chicken Murphy is a popular dish in many Italian-American households and is often served in casual restaurants and diners in the Northeastern United States. It is a great option for informal family gatherings, potlucks, or any occasion where comfort food is the star of the show. In more traditional settings, it might be served as part of a large meal, accompanied by salads, garlic bread, or roasted vegetables. Despite its hearty nature, it can also be found in lighter forms, especially when served with a side of rice or salad.

Fun Facts About Chicken Murphy

Did you know that Chicken Murphy is sometimes called "Chicken Soprano" in certain circles, reflecting its bold, flavorful nature reminiscent of the Italian-American mobster culture? While it may not have a direct connection to the iconic TV show *The Sopranos*, its hearty, no-nonsense ingredients certainly make it a fitting dish for a fictional mob boss. Additionally, the Peppadew peppers that are often used in this dish are not native to Italy. These small, sweet, and slightly tangy peppers were originally grown in South Africa but have become a popular ingredient in many international cuisines.

Another fun fact is that Chicken Murphy is a dish that thrives on creativity. If you can't find Peppadew peppers in your local store, you can easily substitute them with other types of hot peppers, such as banana peppers or cherry peppers. This adaptability allows for a wide range of flavor profiles, making it a versatile dish that can be customized to suit personal tastes.

FAQ about Chicken Murphy Recipe

Store leftover Chicken Murphy in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it on the stovetop or in the microwave. If you prefer, you can freeze the dish for up to 3 months. However, the potatoes may change texture after freezing and reheating.

Yes, you can make Chicken Murphy ahead of time. It actually tastes even better the next day as the flavors meld. After cooking, allow the dish to cool completely before storing it in an airtight container in the fridge. Reheat it on the stovetop over low heat, adding a bit of water or broth if the sauce thickens too much.

If you can't find Peppadew peppers, you can substitute them with pickled cherry peppers, hot banana peppers, or even jarred jalapeños. The flavor will be slightly different, but it will still provide the heat and tang you're looking for.

Yes, you can substitute chicken breasts for chicken thighs in this recipe. Chicken breasts are leaner, so the dish will be a little less rich, but it will still taste great. Be sure to adjust the cooking time slightly, as chicken breasts cook faster than thighs.

You can substitute Russet potatoes with Yukon Gold or red potatoes if you prefer. Just be aware that different types of potatoes may cook at different rates, so adjust the cooking time accordingly. Yukon Golds, for example, will hold their shape better than Russets, making them a great choice for this dish.

If you prefer a spicier Chicken Murphy, you can add more hot peppers, such as fresh jalapeños or chili flakes. Alternatively, use spicier varieties of Peppadew peppers, or add a dash of hot sauce to the dish for an extra kick.

If you don't want to use white wine, you can substitute it with chicken broth, vegetable broth, or even a splash of apple cider vinegar for a tangy kick. Keep in mind that the flavor of the dish will change slightly, but it will still be delicious.

Yes, Chicken Murphy can be served with rice, crusty bread, or even mashed potatoes instead of pasta. The sauce is rich and flavorful, so any side that can soak it up will work perfectly.

The potatoes are done when they are tender when pierced with a fork or knife. If they are still hard after the suggested simmer time, continue cooking them for a few more minutes until they soften.

Yes, you can use other types of sausage in place of Italian sausage. Try using chorizo for a spicier flavor, or chicken sausage for a leaner option. Just be sure to adjust the seasoning to your taste.

I tried this tonight for dinner. My family had mixed reviews. I was skeptical about the "sauce", but it turned out pretty tasty. The sauce thickened enough to serve over pasta, but since we're not big pasta fans, I wanted to serve it without. For this reason I thickened it up some more with cornstarch. I also added peas for extra color and flavor. It was very delicious. I believe I may make it again, but perhaps I'll use chicken broth in place of the water, a dash more white wine, some white pepper and some garlic powder.I think the potatoes add enough starch without the need for the pasta. Thanks for sharing Heather.

I say thanks to submitter Heather and reviewer Maggie McGuire! If it's a rainout for your BBQ here is a great way to use your chicken and sausage! I was in total agreement with Maggie about not using pasta with this dish since we were using potatoes. I followed Maggie's ideas exactly, using chicken broth instead of water, adding peas and thickening it at the end with cornstarch and water. It was great and would be good for an informal gathering. Easy to make. Serve with a salad and French or Italian bread to mop up the thickened sauce! P.S. Watch the onions - they cooked much faster than the sausage and I had to take them out earlier before they burned and left a burned taste in the dish.

We loved this recipe. I followed it with the exception of adding salt and pepper when browning chicken (mixed into the flour). I also added it when adding the veggies. I increased Italian seasoning to two teaspoons. Served with garlic bread . Will make again!

This was a good, but time consuming meal to make. It also challenged my clean-up skills as the finish on my enameled dutch oven is not as smooth as it was in its youth. I could not find peppadew peppers so I used Golden Greek Pepperoncinis and their brine. I used poblano chilis instead of bell peppers and next time might add in some spicier Hatch chilis if the grocery store has them.

Do not use pappadew peppers. I found they added a bitter flavor. Use hot cherry peppers for an authentic chicken murphy. I added the hot cherry peppers and the liquid and it was delicious.

I followed the recipe with one exception. Like others in this comment section, I couldn’t find the Peppadew peppers at any local store. So, I asked the internet for a substitute and was told to use pickled cherry peppers, which I easily found. Prep time was easily double what they suggested. I served the stew over butterfly pasta. The finished stew was quite tasty, and we will be making it again! Oh, and don’t be fooled by the “one-pot” claim. Sure, it cooks in one very large pot, but I ended up using 6 bowls and a couple of small dishes to hold all the ingredients before they all ended up in that one pot! Lots of cleanup, but still worth it.

This was awesome. The flavor was amazing. However, I couldn't find Peppadew peppers anywhere. I also used some of my homemade bone broth with store-bought bone broth. And, instead of Russet potatoes, I used small Yukon Gold with the skins still on. Turned out great. It would help to list what a "dry white wine" is for those of us who aren't familiar with wines. It took me awhile to figure that out. And, you might want to correct the availability of the groceries used in this recipe. The recommendations said I could find them at QFC in my area. Peppadew peppers were not there nor were they at Safeway. I didn't have time to drive around anymore. Yes I will make this again.

Wow Wee! Great recipe. Made as written . Took longer for potatoes to soften than I thought, but might be my fault for not cutting small enough. So delicious with just the right amount of heat!

Coming from a world where cherry peppers, or Peppadew peppers as they are called here, are put on Italian sandwiches with salami and provolone, this had a strange flavor for us. It was eaten, but no WOW factor at all. We all said "This has a strange flavor. Like an Italian hero" So, it will most likely not be made again. I feel it's a cross between chicken scarpariello, Italian stuffed peppers and an Italian sandwich. Like I said, it was eaten but I won't make it again. It should be called Chicken Soprano, nothing Irish about it.

We loved this! I found peppadews on Amazon so I ordered them to be authentic at least for the first time. The amount of heat from the peppers was perfect! This will be on my menu list at least once a month but don't be fooled - prep time is a lot longer than it says. Next time, I'll add the extra time to the recipe.

I made this for our Sunday dinner, it was the first time we did this dish. I don’t follow recipes I omitted the mushrooms, but added celery, bay leaf more pepperdew peppers. It lacked salt. I didn’t know that I should have served with spaghetti till I read another recipe. I ate it for leftovers over some rice I had in the fridge. Wow, it was awesome! I will make it again. Haven't made it yet, but printed the recipe. Will definately make it. A bit confused about the reviews where they mention substituting chicken broth for the water. Did not see water mentioned in the recipe.

I don't use sausages, they're awful where I live. I don't use wine. I have no idea what that spicy pepper is. Is it worth my while to make thus dish.

I decided to make this as it has some of my favorite ingredients. The chicken thighs add so much flavor. Loved the mushrooms and spicy peppers! I served it over pasta but it would be just as delicious with some bread for the sauce. Definitely a keeper for cold winter days!
