Loaded Cauliflower Chicken Casserole Recipe

- 1 head cauliflower, cut into bite-sized pieces
- 1 tablespoon olive oil

- 1 1/2 cups shredded Cheddar cheese, divided

Directions
Step 1: Preheat the oven to 450F (230C). Line a sheet pan with parchment paper and grease an 8x8-inch baking dish with butter.
Step 2: Place the cauliflower pieces onto the prepared sheet pan. Toss with olive oil and season with salt and pepper to taste.
Step 3: Roast the cauliflower in the preheated oven for about 20 minutes, until tender but still firm. Once done, remove the pan from the oven and reduce the temperature to 350F (175C).
Step 4: While the cauliflower is roasting, prepare the sauce. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 3 minutes, until the mixture is bubbly and thickened.
Step 5: Gradually add the chicken stock to the saucepan, stirring continuously. Let the mixture bubble for 3 to 5 minutes, then remove from heat.
Step 6: Stir in 1 cup of the shredded Cheddar cheese until melted and smooth. Then add the sour cream, mixing well to incorporate.
Step 7: Add the chopped cooked chicken to the sauce and stir in the roasted cauliflower.
Step 8: Pour the chicken and cauliflower mixture into the greased baking dish. Bake at 350F (175C) for about 20 minutes, or until the casserole is bubbly and heated through.
Step 9: Once the casserole is ready, sprinkle the remaining shredded Cheddar cheese over the top. Add chopped green onions and crumbled bacon for garnish.

This was fast and delicious!! I added two pinches of garlic powder and black pepper to the sauce. This helped to elevate it's flavor. Trader Joe's Unexpected Cheddar was perfect for this dish. Julie

This was great. I used Greek yogurt in place of the sour cream, replaced some of the butter with olive oil and used Mozzarella instead of cheddar. I did this because this was what was in my kitchen. I also did not use bacon or green onion as I did not have these either. I added garlic and onion powder to the sauce. I will make this again. Husband loved it.

I didn’t have leftover chicken so I diced a chicken breast seasoned with pepper and garlic salt and sautéed with 1\2 chopped onion. I prepped 3/4 of a large cauliflower per recipe. I didn’t really measure the cheese, I may have had a little more than specified. I added some coked bacon pieces right in the sauce as well as a few with onion greens on top. The remainder I did as recipe described. Not too soupy. Delicious!!

The only change I made was to use broccoli in place of cauliflower. While both are nutritritous, broccoli is is much more nutritious than cauliflower, with more vitamins, minerals and fiber. Broccoli is also good for eye health. Taste is similar. It looks prettier, too! Otherwise, no changes. Delicious!! Thank you...

Holy cow this is amazing! I don’t normally try recipes, unless they have many more reviews than this one does, but I sure am glad that I did. I’m also not want to change a recipe without trying it first, but in this case, for health reasons, I made sure I used fat-free cheddar cheese, and I substituted plain Greek yogurt for the sour cream. it was absolutely fantastic! My boys, who are 20, went back for thirds! Thank you for submitting!

added green capsicum to the main body of meal and also added some to the crumb at the end. Only used 1/2 cup of homemade chicken stock & otherwise kept to the recipe. Will be making this often. :)

I did change it up a little. I added sautéed sliced white mushrooms & spinach. I also used Romano cheese rather than cheddar.

We enjoyed this casserole very much. I added additional 1cup cheese and a second large head of cauliflower and it was still very creamy and full of flavor. Next time I’ll try cutting down the calories by steaming the cauliflower instead of baking it.

Lacked flavour; needed something like dry mustard and paprika or lemon pepper and Italian seasoning. Also lots of sauce, so serve with rice or pasta or fresh bread to soak it up.
