Copycat Chipotle Chicken Recipe

Original recipe (1X) yields 6 servings
- 2 pounds skinless, boneless chicken thighs
- 3 cloves garlic, minced
- 2 chipotle peppers plus 2 tablespoons adobo sauce (from 1 can chipotles in adobo)
- 3 tablespoons olive oil, plus more for cooking
- 1 teaspoon ground cumin
- 2 tablespoons white vinegar
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon honey
Directions
Step 1: In a large resealable bag, combine the chicken, minced garlic, chipotle peppers, adobo sauce, 3 tablespoons of olive oil, cumin, white vinegar, kosher salt, black pepper, and honey. Seal the bag and toss to coat the chicken thoroughly with the marinade.
Step 2: Refrigerate the bag with the marinated chicken for at least 4 hours, or up to overnight, to allow the flavors to meld together.
Step 3: Preheat your oven to 350F (175C). Meanwhile, heat a large cast-iron skillet over medium-high heat. If necessary, add a little oil to the skillet.
Step 4: Once the skillet is hot, place the marinated chicken thighs in a single layer in the skillet. Let the chicken cook, undisturbed, for about 5 to 7 minutes, or until it is golden brown and releases easily from the skillet.
Step 5: Flip the chicken and transfer the skillet to the preheated oven. Roast the chicken in the oven for about 20 minutes, or until the chicken is no longer pink at the center and the juices run clear. You can use an instant-read thermometer to check that the internal temperature has reached 165F (74C).
Step 6: Once cooked, remove the skillet from the oven and let the chicken rest for 10 minutes before slicing. This allows the juices to redistribute and the chicken to become even more tender.
