Copycat McChicken Sandwich Recipe

Cook Time: 20 minutes

Ingredients

  • 1 pound boneless skinless chicken breast, cut into 1-inch pieces
  • 3/4 pound boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • 1 teaspoon paprika, divided
  • 2 teaspoons salt, divided
  • 1 cup flour
  • 2/3 cup cornstarch
  • 3/4 teaspoon pepper
  • 6 hamburger buns, toasted
  • 1 1/4 cups club soda
  • Oil for frying, or as needed
  • Shredded iceberg lettuce, to taste
  • 3 tablespoons mayonnaise

Directions

  1. Combine chicken breast, chicken thighs, garlic powder, white pepper, 1/2 teaspoon paprika, and 1 teaspoon salt in a food processor. Pulse until finely chopped and a uniform mixture forms.
  2. Shape the chicken mixture into 6 patties. Arrange them on a parchment or wax paper-lined baking sheet and freeze for 20 to 30 minutes.
  3. Heat oil in a deep fryer or large pot to 375F (190C).
  4. In a bowl, whisk together the flour, cornstarch, remaining salt, remaining paprika, and pepper.
  5. Lightly coat the partially frozen patties in the flour mixture, shaking off any excess. Set them aside.
  6. Add club soda to the remaining flour mixture in the bowl, and whisk to combine into a batter.
  7. Working in batches of 2 or 3 patties, dip each patty into the batter. Allow the excess batter to drip off, then carefully place the patties into the hot oil.
  8. Fry the patties for 5 to 6 minutes per batch, maintaining the oil temperature between 330F and 350F (165C to 175C), until golden brown, crispy, and cooked through.
  9. Remove the patties from the oil and drain them on a wire rack set inside a paper towel-lined rimmed baking sheet. Repeat with the remaining patties.
  10. Toast the hamburger buns and place a patty on each bun. Top with shredded lettuce and a dollop of mayonnaise.

The History of the McChicken Sandwich

The McChicken sandwich, originally introduced by McDonalds in the early 1980s, was designed to offer a convenient chicken alternative to the ubiquitous hamburger. Its creation coincided with the rising popularity of fast-food chicken products in the United States. The sandwich quickly became a staple menu item, appealing to consumers with its lightly seasoned fried chicken patty, crisp lettuce, and creamy mayonnaise on a soft bun. Over time, its simple yet satisfying combination of flavors helped establish the McChicken as a recognizable fast-food icon.

Regional Variations

While the classic McChicken maintains a standard recipe worldwide, regional adaptations exist to cater to local tastes. In some Asian countries, the sandwich may be served with spicy sauces or pickled vegetables, while European versions sometimes include cheddar or different types of lettuce. In Latin America, variations may feature guacamole or local peppers. These subtle regional differences reflect both cultural preferences and McDonalds strategy of global localization, keeping the core identity of the sandwich intact while offering unique flavor twists.

Comparison with Similar Dishes

The McChicken differs from other fried chicken sandwiches primarily in its balance of flavors and textures. Unlike the Chick-fil-A Chicken Sandwich, which emphasizes a sweeter bun and a lighter, seasoned breading, the McChicken focuses on a straightforward, lightly spiced patty with a soft, slightly toasted bun. Compared to homemade fried chicken sandwiches, the McChicken is less greasy and more uniform in size, providing a consistent fast-food experience. Its simplicity sets it apart from gourmet versions that often include pickles, specialty sauces, or artisanal bread.

Where Its Typically Served

The McChicken is almost exclusively found in McDonalds restaurants worldwide, both in-store and through drive-thru service. It is a popular choice for lunch or a quick dinner and is often featured in value menus. While it can be recreated at home using copycat recipes, the original sandwich is most commonly enjoyed as part of a meal combo with fries and a soft drink, reflecting its fast-food heritage.

Interesting Facts

  • The McChicken was initially created to compete with other fast-food chains offering chicken sandwiches, including Wendys and Burger King.
  • Its recipe has remained largely unchanged since its introduction, highlighting its enduring popularity.
  • The sandwich is particularly popular among teenagers and young adults due to its affordability and satisfying taste.
  • Despite its simple ingredients, the McChicken has inspired numerous copycat recipes that aim to replicate the exact flavor and texture of the original patty.
  • In some countries, McDonalds offers seasonal or promotional variations of the McChicken, including spicy or deluxe versions with extra toppings.

Yes, you can make the patties ahead of time and freeze them. The frozen patties can be stored for up to a month. When ready to cook, simply fry them from frozen for best results.

Leftover cooked patties can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, you can place them in a preheated oven at 350°F (175°C) for about 10 minutes to maintain their crispiness.

Yes, you can substitute the club soda with sparkling water. This will still give the batter a light and crispy texture. Alternatively, you can use regular water, but the batter may not be as airy.

Yes, you can use a gluten-free all-purpose flour blend in place of regular flour. Be sure to check the ingredients to ensure it’s suitable for frying, as some blends may need additional adjustments.

Freezing the patties before frying is key to keeping them intact. The cold temperature helps the patties maintain their shape while frying. Avoid overcrowding the frying pan to ensure the oil temperature remains consistent.

You can serve the sandwich with a side of crispy fries, coleslaw, or a simple salad. Pickles or tomato slices also make a great addition for extra flavor.

Each batch should fry for about 5 to 6 minutes, until golden brown and crispy. Make sure the oil temperature is between 330°F and 350°F (165°C to 175°C) for the best results.

The final, cooked breading reminded me of McDonald’s chicken nuggets.I’ve never made food processor-type ground chicken but it turned out good.We put chick fil-a sauce on them.I would make again for a treat for my kids. Also used only chicken breast as that was all I had. Didn’t seem to make a difference. Lastly I made the chicken patty about 4.3 ounces which was, imo, too big. Probably about 3 -3.5 ounces more realistic for us.
