Directions
- Gather all ingredients and prepare the necessary tools for cooking.
- Preheat the oven to 375F (190C).
- Season chicken thighs evenly with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add chicken thighs to the skillet, skin side down, and cook until golden brown on both sides, about 8 minutes. Once browned, transfer the chicken thighs to a plate and set them aside. Do not wipe the skillet clean.
- Add chopped garlic to the drippings in the skillet. Cook, stirring constantly, until fragrant, 10 to 20 seconds.
- Add rice, cream of chicken soup, lemon juice, lemon zest, tarragon, and crushed red pepper to the skillet. Whisk to combine the ingredients.
- Gradually add chicken broth, whisking constantly, until the mixture is smooth and well combined.
- Arrange the seared chicken thighs, skin side up, over the rice mixture. Place lemon slices on top of the chicken thighs.

Overall this was very good and easy to make. I followed the recipe as is other than adding more garlic and more red pepper flakes because we like a little heat. It came out tasty. I won’t it fix often but I will fix it again when I need something quick and easy for a last minute dinner. If you like lemon, give it a shot.

I live in Colorado so I’m at a higher altitude, I added about 3/4 cup extra broth and cooked it for 40 minutes and it’s came out perfect. Husband wants me to cook this again

We liked it and will make it again! I put a little extra lemon and garlic in it. When I make it again I would probably add more liquid as the rice was a little dry and crunchy in spots.

Didn’t really change much about the recipe except added some poultry blend seasoning to the chicken thighs. Cooking each side of the thighs for exactly 8 minutes was perfect 👌 Can’t beat cooking in a quality cast iron pan.

We are gluten free, so we made our own cream of chicken from chicken bone broth, cream, butter and almond flour. It was not as thick as canned cream of chicken, but the rice absorbed all the extra liquid perfectly. We also could not find fresh tarragon, but subbed dried and it was fabulous. Great recipe!

HUGE hit. My extremely picky child actually ate it. Inexpensive and easy! I didn't have tarragon so I did 1 tsp of fennel and 1 tsp dill to see what would happen. Omitted red pepper because kids. Great flavor.

We reaaaallly enjooooyed the overall idea. We marinated the chicken with more spices like paprika and garlic powder.. we were trying to go for an all spice combo. We didn't have cream of chicken soup so we used coconut milk... that gave it a wonderful aroma / unique flavour. We also added a loooot more garlic and lemon. I hope I can put my picture here to show u.. we doubled the recipe..

I doubled the recipe since I have a big family, transferred it to a baking dish, used 2 cans condensed chicken soup and golden mushrooms, one each. Instead of tarragon (since I don't have one), I used 2 star anise, maybe 3 or 4 would be better, but it's really tasty!!
