Chicken Taco Dump Dinner Recipe
This easy and flavorful chicken enchilada casserole is packed with tender shredded chicken, black beans, corn, and melted cheese. Perfect for a family dinner or a gathering!
Ingredients
- Cooking spray
- 1 (16 ounce) jar thick and chunky mild salsa
- 1 (4 ounce) can diced green chiles
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 5 cups shredded cooked chicken
- 1 (15 ounce) can black beans, rinsed and drained
- 1 1/2 cups frozen fire-roasted corn
- 12 (6 inch) corn tortillas
- 3 cups shredded Monterey Jack cheese, divided
- Taco toppings (such as shredded lettuce, chopped red onion, chopped fresh cilantro, taco sauce, sour cream, chopped avocado, or crushed tortilla chips)
Directions
- Preheat the oven to 375F (190C). Grease a 9x13-inch baking dish with cooking spray.
- In a large bowl, combine the salsa, diced green chiles, chili powder, cumin, and salt. Stir in the shredded chicken, black beans, and corn until well mixed.
- Place half of the tortilla pieces in the bottom of the prepared baking dish. Top with half of the chicken mixture, followed by 1 cup of shredded Monterey Jack cheese.
- Repeat the layers with the remaining tortilla pieces, chicken mixture, and another 1 cup of shredded cheese.
- Cover the baking dish with aluminum foil and bake for 35 minutes.
- After 35 minutes, remove the foil and sprinkle the remaining 2 cups of shredded cheese on top. Return to the oven and bake for an additional 10 minutes, or until the casserole is heated through and the cheese is melted and lightly browned.
- Remove from the oven and let cool slightly before serving. Top with your favorite taco toppings like shredded lettuce, chopped red onion, cilantro, sour cream, avocado, or crushed tortilla chips.

This is a super easy, quick meal. Only suggestion would be to put a light layer of salsa on the bottom to keep that first layer of tortillas from getting tough.

Omg my husband and I just love it.. kept to the recipe Except I added 3 tbsp minced garlic and cooked it in the crock pot instead of oven and used it for a taco.. We.just love it

Tacos by Fork I enjoyed the Mexican flavors of this dinner so much I had two servings. It was wonderful to have eaten a great taco dish with a fork! No Messy hands!! I read the reviews and a cooked made two one chicken and one beef. So I added shredded beef too. I halved the recipe and cut the tortillas in quarters. I really like the suggested toppings as this was the first recipe I have rated without improvising because it was done for me. I topped with a drizzle of sour cream, enchilada sauce, jalapeno, green onion, cilantro and red cabbage. Tacolicious!!

I made with chicken. Used entire Sam’s Club rotisserie chicken. Couldn’t find frozen fire roasted corn. Used frozen sweet corn instead. Followed recipe and used all of suggested garnish. Turned out amazing!! Everybody had seconds! Making it again tonight for our dinner guests. 😋

Ohmigosh...this casserole is as good as it is easy to make. Especially if you use rotisserie chicken from the market. No cooking at all in that case. The flavors are nicely layered; I made it exactly as shown, and the first bite was heavenly. Just a hint of spice coupled with the sweetness of the fire-roasted corn. Try it; it may just become one of your family's favorites. And for the vegetarians, just leave out the chicken. I'm recommending it to our daughter. I 'm sure this will meet with her approval as well.

I used extra cheese, otherwise followed the recipe exactly. So good!!! Also, adding crushed tortilla chips, iceberg lettuce and Taco Bell sauce to the finished dish was perfect.
