Ingredients

  • 1 pound penne pasta
  • 1 lemon
  • 1 tablespoon butter
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 2 (15-ounce) jars Alfredo sauce
  • 1 cup ricotta cheese
  • 3/4 cup reduced-sodium chicken broth
  • 1 (3-ounce) jar capers, drained
  • 1/4 teaspoon freshly ground black pepper
  • 3 1/2 cups chopped cooked chicken
  • 1 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh Italian parsley, or as needed

Directions

Step 1: Gather all the ingredients and set them aside.

Step 2: Preheat the oven to 350F (180C). Grease a 9x13-inch baking dish with cooking spray or butter.

Step 3: Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, about 11 minutes. Stir occasionally to prevent sticking. Once done, drain the pasta and set aside.

Step 4: Zest the lemon to get 1 teaspoon of zest, then juice it to yield about 3 tablespoons of lemon juice. Set both the zest and juice aside.

Step 5: In a large skillet, melt the butter over medium heat. Add the chopped shallot and minced garlic to the skillet. Saut until they become soft and fragrant, about 2-3 minutes.

Step 6: In a large bowl, whisk together the cooked shallot and garlic, lemon juice, Alfredo sauce, ricotta cheese, chicken broth, capers, and freshly ground black pepper.

Step 7: Add the cooked penne pasta and chopped chicken to the bowl. Toss everything together until well combined.

Step 8: Transfer the pasta and chicken mixture into the prepared 9x13-inch baking dish, spreading it out evenly.

Step 9: In a small bowl, mix together the grated Parmesan cheese and lemon zest. Sprinkle this mixture over the top of the pasta.

Step 10: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden and the dish is bubbly.

Step 11: Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.

Enjoy your creamy, cheesy, and flavorful Chicken Alfredo Penne Bake!

Creamy Chicken Piccata Pasta Bake Recipe

The Story Behind Creamy Chicken Piccata Pasta Bake

The origins of chicken piccata trace back to Italy, where "piccata" refers to a method of preparing meat with lemon, butter, and capers. Traditionally, it was a simple sauted chicken dish, often served with a light sauce. The pasta bake version is a modern American adaptation, combining the zesty flavors of classic piccata with the comforting, cheesy richness of a casserole. It likely emerged in the late 20th century as home cooks sought convenient, family-friendly versions of restaurant dishes that could be prepared ahead of time.

Regional Variations and Influences

While chicken piccata is widely associated with Northern Italy, particularly Lombardy, the pasta bake adaptation has strong ties to American cuisine, especially in suburban households where casseroles are popular. Some regions may incorporate different cheeses, such as mozzarella or provolone, instead of or alongside Parmesan. Others may swap penne for rigatoni or fusilli, depending on local preferences. Additionally, some variations include white wine or chicken stock in the sauce to deepen the flavor, reflecting regional tastes and ingredient availability.

How It Differs From Similar Dishes

Creamy chicken piccata pasta bake differs from traditional chicken piccata in its use of pasta and baked format. Unlike the sauted version, which is light and quickly cooked, this casserole is richer and more filling due to the combination of ricotta, Alfredo sauce, and Parmesan. Compared to other baked chicken pasta dishes, such as chicken Alfredo bake, the addition of lemon and capers gives this dish a distinctive tangy and slightly briny flavor, making it uniquely bright and savory.

Where Its Typically Served

This pasta bake is a favorite for family dinners, potlucks, and casual gatherings. Its ability to be prepared ahead and baked when needed makes it ideal for entertaining. It is often served as the centerpiece of a meal alongside a simple green salad or garlic bread. In some American restaurants, it appears on comfort-food menus or as part of Italian-American cuisine offerings, appealing to those who enjoy hearty, flavorful casseroles.

Fun and Interesting Facts

  • Piccata literally means larded in Italian, but in culinary use it refers to meat cooked with a tangy lemon-caper sauce.
  • Though pasta is not part of traditional piccata, combining it with noodles turns it into a convenient, one-dish meal.
  • Capers were historically prized in Mediterranean cooking for their piquant flavor and were often used to enhance simple sauces.
  • The dishs creamy texture comes from the combination of ricotta and Alfredo sauce, demonstrating a blend of Italian-American comfort food traditions.
  • Using a casserole format allows the flavors to meld together during baking, which some cooks say makes the dish even more flavorful the next day.

Ive not made this yet but i think i might do this dish with cream cheese and a mild easy melting white cheese. To this mixture i might add a splash or 5 of white wine and heavy cream to thin it to good consistency. Then add the lemon juice probably a little more than 1/4 cup and zest capers allot of black pepper and salt.

Made this and it was pretty good. Didn’t change anything because I wanted the piccata flavor. Next time, I will add a bit more seasoning to up the flavor. Saw a basil flavored Alfredo sauce and I’m thinking that might be good in this recipe. Also, would add a little more lemon zest to the parm topping.

This recipe was not a favorite at our house. It had potential but just wasn't for us. The lemon flavor was overpowering along with the capers, things we normally enjoy. The dish went together well but the flavor profiles need an adjustment.
