  • 6 (6 to 8 inch) skewers
  • Olive oil cooking spray
  • 4 tablespoons butter
  • 2 teaspoons finely chopped fresh parsley

Directions

  1. In a bowl, whisk together the olive oil, white wine, 2 tablespoons of lemon juice, lemon zest, 1/2 of the minced garlic, crushed red pepper flakes, dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

This recipe is delicious, but I have to deduct a star because the preparation time is incredibly unrealistic unless you have a team of prep cooks to help clean and cube the chicken, skewer it, prepare the marinade, batter the chicken, and get everything ready.
