Directions

I made my minute rice first and used half and half instead of cream. The dish turned out good, but I think I might have added too much cheese. I used a pre-shredded bag of Parmesan that claimed it was 1 and a half cups, but the Alfredo sauce ended up way too thick. It didn't have the same consistency as the Alfredo at Olive Garden. To fix it, I added double the half and half, but then it seemed too runny. I ended up adding half a cup more of uncooked minute rice to balance it out. The final result was okay and tasty enough to make again, but next time, I'll add the cheese gradually instead of all at once! 😊

I will definitely give it another try with some adjustments. The balance of meat, rice, and vegetables was spot on. I ended up adding about 1.5 cups of leftover peas, carrots, and corn and it still worked well. I'm interested in trying it with broccoli, but it would need to be chopped into smaller pieces. While it wasn't dry, I would prefer it to have a bit more sauce. For the next attempt, I plan to either: 1) increase the amount of cream to 1.5 cups if using Minute rice, or 2) cook the rice separately and then add it to 1 cup of cream. Additionally, I realize I should have used a larger saucepan to mix the chicken and veggies before transferring them to the casserole dish.
