- 1 yellow onion, chopped
- 1 large carrot, chopped
- 1 stalk celery, chopped
- 2 cloves garlic, minced
- 1 (15.5 ounce) can navy beans, drained
- 4 cups chicken broth
- 1 pounds broccoli, chopped
- 1 teaspoon paprika
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1 cup full-fat cottage cheese (small or large curd)

History of High Protein Broccoli Cheddar Soup
Broccoli cheddar soup has its roots in American cuisine, dating back to the mid-20th century when creamy vegetable soups became popular comfort foods. The addition of Cheddar cheese reflects the influence of traditional dairy-rich recipes from the Midwest, where cheese production was historically abundant. The high-protein variation, incorporating beans and cottage cheese, is a modern adaptation responding to contemporary nutritional trends that emphasize protein intake alongside vegetables.
Regional Characteristics
This soup is most commonly associated with American Midwest and Northeastern culinary traditions. In these regions, broccoli and Cheddar cheese are staples, often used in hearty, warming dishes suitable for colder climates. While the classic version may be lighter, the high-protein variant is particularly popular in areas with a focus on health-conscious dining, such as urban centers with wellness-oriented restaurants.
Differences from Similar Dishes

This creates a unique balance of creaminess and nutritional density. Compared to potato or cauliflower soups, broccoli cheddar soup stands out for its vibrant green color and slightly sharp flavor profile from the Cheddar, while the added legumes provide a subtle nutty undertone.

Review: I absolutely loved this recipe! I decided to elevate it by incorporating chicken bone broth for an extra boost of protein. Additionally, I included a mix of chicken bouillon, mustard powder, garlic powder, onion powder, and celery seed to enhance the flavors. To make it even more indulgent, I swapped half a cup of pepperjack cheese into the mix. The end result was simply incredible - the dish turned out amazing! I would wholeheartedly give it a perfect 10 out of 10 rating and highly recommend trying it out.
