Homemade Hamburger Helper Recipe
Ingredients
This recipe yields 4 hearty servings. Amounts are based on the original recipe, with automatic scaling adjustments for quantity, though cooking times remain the same.
- 1 pound 85% lean ground beef
- 1/2 cup diced yellow onion
- 2 tablespoons tomato paste
- 1 tablespoon ketchup
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 3 1/2 cups beef broth
- 1 cup elbow macaroni
- 6 ounces shredded Cheddar cheese (about 1 1/2 cups)
Directions
- Gather all your ingredients and set them within easy reach.
- Heat a large, heavy-bottomed pot over medium-high heat. Add the ground beef and diced onion. Stir occasionally until the beef is browned, fully crumbled, and no longer pink, about 7 minutes. Spoon off any excess fat.
- Add tomato paste, ketchup, garlic powder, chili powder, salt, paprika, and black pepper. Stir constantly for 2 minutes until the mixture becomes aromatic.
- Pour in the beef broth and bring it to a rolling boil over high heat.
- Stir in the elbow macaroni, reduce the heat to medium, and let it gently boil uncovered. Stir occasionally until the pasta is tender and most of the liquid is absorbed, about 13 to 15 minutes.
- Remove the pot from heat and fold in the shredded Cheddar cheese. Stir until the cheese is fully melted and smoothly incorporated, about 30 to 45 seconds.
- Let the dish rest for 2 minutes to thicken slightly before serving. Dish out and enjoy the cheesy, comforting goodness.

The History of Hamburger Helper
Hamburger Helper, as a concept, originated in the United States during the 1970s, created by General Mills to provide an easy, affordable, and versatile meal for busy families. The boxed versions became widely popular due to their convenience, allowing home cooks to combine ground beef with pasta and a flavorful sauce without extensive preparation. This homemade version captures the nostalgic essence of the original while improving on freshness and taste.
Regional Variations
While Hamburger Helper is commonly associated with classic American comfort food, regional adaptations have emerged. In the Midwest, the dish often emphasizes cheddar cheese and hearty seasonings. In the South, versions may include a touch of chili powder or smoked paprika for added depth. Coastal regions sometimes incorporate seafood, such as shrimp or crab, while Western adaptations might add fresh vegetables or even beans, reflecting local produce and culinary preferences.
Distinguishing Features from Similar Dishes
Homemade Hamburger Helper differs from similar comfort foods like macaroni and cheese or beef stroganoff in both flavor and preparation. Unlike boxed macaroni and cheese, it balances a rich, savory beef base with a subtly seasoned sauce and tender pasta. Compared to stroganoff, it lacks heavy sour cream or mushrooms, making it quicker and simpler while still hearty and satisfying. Its one-pot convenience and adaptability set it apart from other beef-and-pasta combinations.
Typical Serving Settings
Hamburger Helper is most commonly served as a casual family dinner. It is often found in home kitchens during weeknight meals, in lunchboxes as leftovers, or at informal gatherings. Some restaurants and diners offer a version of the dish, usually customized with local cheeses or spices, highlighting its comfort-food status. It pairs well with a simple side salad, steamed vegetables, or crusty bread for a complete meal.
Interesting Facts
- The original boxed Hamburger Helper introduced in 1971 was intended as a solution to rising beef prices, stretching a pound of ground beef into a filling meal.
- The dish inspired numerous flavor variations, from classic cheeseburger to chili macaroni, and even limited edition flavors over the decades.
- Many home cooks use Hamburger Helper as a base for experimentation, adding ingredients like fresh vegetables, alternative cheeses, or spices for personalized recipes.
- Despite its convenience, homemade versions like this recipe often surpass the boxed original in taste, texture, and nutritional value.
- In popular culture, Hamburger Helper has been referenced in TV shows and movies, symbolizing the quintessential American quick meal.

Super small modifications--I mixed the ketchup and tomato paste into my beef broth, and added 1/2 tsp of Knorr tomato bouillon. Because of that swap, I only used a pinch of salt. You can adjust the salt while it's cooking. a few little shakes of msg do the trick. I do add more pasta--we like a lot of noodles. So a 7oz pack of La Moderna elbows or other short pasta is what I use. Even as is--this recipe is delicious. I just like to put a little more oomph in it!

Really tasty, and easy to adapt for a little variety. I even added mixed veggies. I used a little extra spice, low sodium broth and a bit less cheese, no salt, since I must do low sodium for my health. I made Hamburger Helper for my kids growing up. That was and this is very yummy!

I use 2 boxes of Mac and Cheese along with melted, shredded cheddar added as the final product. Cook pasta noodles before adding the cheese. I also use a package of MILD chili seasoning. 1 full can of tomato paste. No Ketchup. Add butter and milk as you would to just plain Mac and cheese. I also add one can of Stagg chili with beans (mild) to give it that extra chili "pop". Add extra water when cooking the pasta noodles. It will absorb much of the water. Plus, tomato paste has a tendency to thicken your food and you don't want it to be too dried out, or too thick. The beef broth is not necessary. That's what the package of Chili Seasoning is for, as well as, the can of Stagg. My roommates say that my version blows the Hamburger Helper Chili Mac out of the water. Definitely worth the extra effort.

Made this today for super bowl '25. Very little grease to drain, had white onion. I felt not much flavor so double seasoning while low boil plus a shake of cayenne pwdr. Only had low sodium beef Stock and used 2% Velveta for creamiest. Kitchen smelled like HH! Will make this again!

I didn’t have beef broth so instead of draining the beef i just added water. I added 3 cups of hot water and half cup of milk. No tomato paste so i added the ketchup a bit more then called for and added two tablespoons of flour to the beef and onion mix to thicken it. . I didnt add cheese as it thickened nicely without it. After thought a pinch of worschesterhire sauce would be tasty. Other then that it’s an easy recipe anybody could make and budget friendly

Definately much better that the boxed version. Easy one pot preparation. The only change I made was to put the cheese into serving bowls and add the finished Hamburger Helper on top. I thought this might make for reheating leftovers easier. Oh, and I only had chicken broth on hand, but it was still fine. I'll try it with beef broth when I have some.

This was a really quick simple dinner and it was delicious. I took the advice of adding more of the spices and left the salt out until the end so I could control that. I also used ground turkey and chicken stock because that’s what I had. I also added a can of chopped tomatoes, juice and all. 100% yum!

I made this last night but doubled the spices as these recipes usually come out a bit bland, phenomenal! I also used 1 cube of chicken bouillon and a litre of water as I didn't have broth. Will definitely make it again soon. Very low effort and high reward.

My husband and I loved the concept, but it was way too salty. Next time I will not add the extra salt and try to find low sodium beef broth. I also plan to use half a pound of beef and more noodles to save money.
