My husband said it was the perfect soup. It is the best soup he ever ate. I definitely agree. The sausage, I browned the very large links in a skillet then sliced them, back to the skillet. Since they were not done this worked because I put the silvered carrots and onions in the skillet. When about done I added the celery. Meanwhile I added the liquid ingredients to a pot. I had a lot of sausage, carrots, onion, and celery (which was still crunchy). I added the sausage mixture to the pot. Then added the tortellinis, which were fresh, so they only took a few minutes of cooking. Oh I used half and half, to cut down on calories. I used Fontina cheese as that is what I had on hand. I served it with fresh baked Italian bread. We love this soup. Looking forward to making it again.

This was delicious! Omitted the carrots because I didn't have them, and used half and half instead of heavy cream. The soup was very creamy but I prefer it that way. I'm also always heavy handed with the cheese so that made it creamier. Was even better the next day for lunch. Will definitely put into our dinner rotation.
