Company Couscous Recipe
Ingredients

Original recipe (1X) yields 4 servings
- 1 cup couscous
- 1 cup boiling water
- 3 tablespoons olive oil
- 1 clove garlic, minced
- cup diced red bell pepper
- 4 green onions, sliced
- 1 cup cherry tomatoes
- 1 cup fresh basil leaves
- 1 pinch salt
- 1 pinch ground black pepper
- 1 dash balsamic vinegar
- cup grated Parmesan cheese
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: Stir couscous into the boiling water and bring it back to a boil. Once its boiling again, cover the pot and remove it from the heat. Let it stand for 5 minutes, then fluff the couscous with a fork.
Step 3: While the couscous is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic, sliced green onions, and diced red bell pepper. Saut for a minute or so until the vegetables soften.
Step 4: Add the cherry tomatoes, fresh basil leaves, cooked couscous, salt, and black pepper to the skillet. Mix everything together until well combined.
Step 5: Transfer the mixture to a 1 quart casserole dish. Drizzle a dash of balsamic vinegar on top.
Step 6: Place the casserole dish in the preheated oven and bake for 20 minutes.
Step 7: After baking, remove the dish from the oven and immediately sprinkle the couscous with grated Parmesan cheese while still warm. Serve and enjoy!
