Granddad's Peppermint Fudge Recipe

Ingredients:
- 1 (12 ounce) bags semisweet chocolate chips
- 1 (7 ounce) jar marshmallow creme
- 1 cup margarine
- 4 cups white sugar
- 1 (12 ounce) can evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
Directions:
- Place the chocolate chips, marshmallow creme, and margarine into a large mixing bowl.
- In a separate large pot, combine the sugar and evaporated milk. Heat over medium-low, stirring constantly. Bring the mixture to a rolling boil.
- Once boiling, reduce the heat to low. Keep stirring gently, being careful not to scrape the sides of the pot. Use a candy thermometer to monitor the temperature, aiming for 240F (115C). This process should take 7 to 10 minutes. You can test the syrup by dropping a small amount into cold water if it forms a soft ball that flattens when removed and placed on a flat surface, its ready.
- Pour the hot sugar mixture over the chocolate chip mixture in the bowl. Stir until well combined.
- Stir in the vanilla and peppermint extracts until evenly incorporated.
- Line a 9x13-inch rimmed baking sheet with wax paper. Pour the fudge mixture onto the prepared sheet.
- Refrigerate the fudge for about 2 hours, or until completely set.
- Once set, remove the fudge from the refrigerator. Run a sharp knife under hot water, then cut the fudge into 1-inch squares.
Cook's Notes:
- You can substitute dark chocolate chips for the semisweet variety if you prefer.
- For shaped or piped fudge: Use an electric mixer to beat the fudge for about 15 minutes, or until its cool enough to hold its shape. Then, use two spoons to scoop and form balls of fudge on wax paper, or pipe rosettes using a silicone piping bag fitted with a large tip. Stir the fudge regularly to keep it from hardening while you work.
