Ingredients

This recipe was originally developed for 4 servings. Ingredient amounts are adjusted when scaling, but cooking times and steps remain the same. Note that not all recipes scale perfectly.

  • 1 3/4 cups skim milk, divided
  • 2 tablespoons cornstarch
  • 1/3 cup white sugar
  • 1/3 cup unsweetened cocoa powder (high-quality)
  • 2 teaspoons instant espresso powder (optional)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Directions

  1. Step 1: In a small bowl, whisk together 1/4 cup of milk and cornstarch until smooth, creating a slurry.
  2. Step 2: In a small saucepan, combine the remaining milk, sugar, and cocoa powder. Place over medium heat and stir constantly until it comes to a boil.
  3. Step 3: Stir in the espresso powder (if using) and add the cornstarch slurry. Return to a boil and cook for about 2 minutes, stirring, until the mixture thickens to a pudding-like consistency.
  4. Step 4: Remove from heat and transfer the mixture to a metal bowl. Stir in vanilla extract and a pinch of salt.
  5. Step 5: Prepare an ice bath by filling a large bowl with ice water. Place the bowl with the gelato mixture inside and stir frequently until cooled, about 7 minutes.
  6. Step 6: Remove from the ice bath, cover with plastic wrap, and refrigerate until fully chilled, about 20 minutes.
  7. Step 7: Pour the chilled mixture into an ice cream maker and churn according to the manufacturers instructions, about 20 minutes.
  8. Step 8: Transfer the gelato to a freezer-safe , cover, and freeze until firm, about 10 minutes.

Cook's Note

For a creamier texture, use organic skim milk.
