Easy Chocolate Icebox Cake Recipe
Chocolate Cookie Cream Cake
This delightful dessert is perfect for any occasion. It's easy to prepare, requires no baking, and will impress your guests with its creamy layers and rich flavor.
Ingredients
- 3 cups heavy cream
- 1/2 cup confectioners' sugar
- 2 teaspoons vanilla extract
- 1 (13.1 ounce) packages thin chocolate cream sandwich cookies, such as Oreo Thins
Directions
Step 1: Gather all the ingredients and set up your work area. Make sure you have a clean 8x4-inch loaf pan ready for the cake.
Step 2: Line the loaf pan with plastic wrap, allowing it to hang over the edges. This will help you easily remove the cake later.
Step 3: In a large mixing bowl, pour in the heavy cream and beat it using an electric mixer on medium speed for about 2 minutes.
Step 4: Add the confectioners' sugar and vanilla extract to the whipped cream. Continue mixing until soft to medium peaks form. Save 1 cup of this whipped cream and refrigerate it for later use.
Step 5: Start assembling the cake by spreading a thin layer of the whipped cream at the bottom of the prepared pan.
Step 6: Take the chocolate cookies and place a layer on top of the whipped cream. You can break the cookies into smaller pieces to fill in any gaps.
Step 7: Add 1/4 of the remaining whipped cream over the cookies, spreading it evenly.
Step 8: Repeat the process by adding another layer of cookies, followed by another 1/4 of the whipped cream. Continue layering until all the cream has been used, finishing with a top layer of cookies pressed into the cream.
Step 9: Cover the pan with the overhanging plastic wrap, and refrigerate the cake for at least 8 hours (overnight works great for the best texture).
Step 10: When you're ready to serve, carefully unwrap the cake and invert it onto a serving plate. It should come out easily due to the plastic wrap.
Step 11: Top the cake with the reserved whipped cream and garnish with crushed cookies for a final touch.
Step 12: Slice and serve. Enjoy this decadent dessert!

My Mom made this refrigerator “cake” for my August birthdays through the years. Mom would put maraschino cherries on top for decoration. One tip, never use Redi-whip in place of the real whip cream. I was told it uses CO2 as a propellant. It turns back into a liquid…so you have cookie soup. Don’t try to cut any corners.

I grew up on this delicious ICEBOX Cake and we loved it. Later in life, I had kids make it ad sometimes had them think of a sculptures they wanted to make. We used wafer thin chocolate cookies and stood them up with the cream mixture holding everything together. Beyond delicious!

I was looking for a way to use my many Oreo cookies that I bought on a discount and this recipe delivered a great result. First of all, it is very easy to make and it looks like a tasty cloud in the end, and I sure love serving yummy clouds to my guests. The Oreo cookies however add that much needed crunch to this icebox cake and there is really nothing like freshly whipped cream, it just feels so airy and smooth, and not dense at all. I must say that I added even more whipped cream that the recipe calls for but you can also add less if you want even more crunch in the overall experience, it’s very versatile in that sense.

SO Good! My daughters helped make this recipe for a bbq we were attending. They devoured it before i could get a picture. It came together easy and tasted delicious. Definitely going to make this again.
