Chocolate Kale Cookies Recipe

Ingredients

  • cup all-purpose flour
  • 1 tablespoons unsweetened cocoa powder
  • teaspoon baking soda
  • cup applesauce
  • cup finely chopped kale
  • cup white sugar
  • 1 tablespoon unsalted butter, softened
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1 tablespoon canola oil
  • 1 teaspoon honey
  • 2 tablespoons dark chocolate chips (optional)

Directions

  1. Preheat the oven to 325F (165C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, and baking soda.
  3. Place the applesauce and kale in a blender and blend until smooth, about 30 seconds.
  4. In a separate bowl, use an electric mixer to beat the sugar, butter, egg white, and vanilla extract until smooth and creamy.
  5. Add the kale mixture, canola oil, and honey to the butter mixture and beat until well combined.
  6. Gradually stir in the flour mixture until the dough is just mixed, being careful not to overwork it.
  7. If desired, fold in the dark chocolate chips.
  8. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10 to 12 minutes, or until the edges are slightly hardened.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
