Chocolate Kale Cookies Recipe

Ingredients
- cup all-purpose flour
- 1 tablespoons unsweetened cocoa powder
- teaspoon baking soda
- cup applesauce
- cup finely chopped kale
- cup white sugar
- 1 tablespoon unsalted butter, softened
- 1 egg white
- 1 teaspoon vanilla extract
- 1 tablespoon canola oil
- 1 teaspoon honey
- 2 tablespoons dark chocolate chips (optional)
Directions
- Preheat the oven to 325F (165C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, and baking soda.
- Place the applesauce and kale in a blender and blend until smooth, about 30 seconds.
- In a separate bowl, use an electric mixer to beat the sugar, butter, egg white, and vanilla extract until smooth and creamy.
- Add the kale mixture, canola oil, and honey to the butter mixture and beat until well combined.
- Gradually stir in the flour mixture until the dough is just mixed, being careful not to overwork it.
- If desired, fold in the dark chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are slightly hardened.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
