Oatmeal Peanut Butter Cookies Recipe

Peanut Butter Oatmeal Cookies

Ingredients:

  • 1 cup peanut butter
  • 1 cup packed brown sugar
  • cup white sugar
  • cup shortening
  • cup margarine, softened
  • 2 large eggs
  • 1 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup quick-cooking oats

Directions:

  1. Preheat your oven to 350F (175C).
  2. In a large bowl, beat together peanut butter, brown sugar, white sugar, shortening, and margarine using an electric mixer on medium speed until the mixture is smooth and creamy.
  3. Add the eggs one at a time, beating well after each addition until fully incorporated.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually stir this dry mixture into the creamed ingredients until everything is well combined.
  5. Fold in the oats until just mixed.
  6. Drop teaspoon-sized portions of dough onto ungreased cookie sheets, spacing them evenly apart.
  7. Bake in the preheated oven for 10 to 15 minutes, or until the cookies are lightly browned. Be careful not to overbake.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Store the cooled cookies in an airtight to keep them fresh.

AMAZING! I used 1 cup of butter instead of margarine and shortening, and it resulted in the most DELICIOUS cookie ever. Thank you so much! I also threw in chocolate chips, peanut butter chips, and white chocolate chips into some cookies for an extra special treat. Thanks once again!

I substituted 2 sticks of unsalted butter for margarine/Crisco and used butterscotch peanut butter from Horrock's. I also added half a teaspoon of vanilla, chocolate chips, and a few remaining butterscotch chips. Baked for 15 minutes on air pans, resulting in the perfect blend of crunchy and chewy textures!

Excellent! These cookies have a light and soft center with crisp edges. They bake perfectly in about 13-14 minutes. Made with all butter and a reduced amount of sugar: 3/4 cup + 1 tablespoon of brown sugar, and 1/2 cup + 1 tablespoon of white sugar. They also contain an extra 1/3 cup of oats for added texture.

I absolutely loved this cookie recipe! I used unsalted butter instead of margarine or shortening, and old-fashioned oats because that's what I had on hand. After reading some reviews, I decided to add an extra 1/3 cup of oats and a splash of vanilla extract. I also threw in a cup of semisweet chocolate chips for good measure. Using a medium cookie scoop, I portioned out heaping tablespoons of dough and baked them for 11 minutes. The result was a batch of cookies that were light and crispy on the outside with a slightly soft middle. This recipe made about 40 medium-sized cookies, and my grandkids devoured them in no time. These cookies came out incredibly delicious!! Following the recommendation of others, I added an extra 1/3 cup of oats, 1 teaspoon of vanilla extract, and 1 cup of a mixture of chocolate chips and Skor bits. The result was absolutely amazing!!
