My mom has made peach cobbler like this but in a 13”x9” Pyrex dish since the ‘70s. It’s our go to during peach season and between Thanksgiving and Christmas as a break from all things pumpkin. Only adjustments she makes is that she uses brown sugar and adds cinnamon. It’s one of our family favorites and always served with vanilla bean ice cream. She also uses this recipe but substitutes out apples or pears for the peaches. It’s amazing!!

I live in a town that has a yearly "Peach Days". We eat, drink, and live peaches, every year around harvest time. One of my families favorites is peach cobbler. I go to a small family orchard, pick up a peck of peaches and head home. Whatever we don't consume in a few days gets made into peach cobbler. I added vanilla extract to the peaches and brown sugar to the top and let it cook. I do remove the lid and let it go a little longer to crisp it up a little. I love the combination of soft cake with the slight crisp. Add ice cream while it's still warm. Soooo good!

This is so yummy! The only changes I've made was I used BUTTER cake mix once and used yellow cake mix once. Both were GOOOOD! Tonight I'm using WHITE cake mix. I'm sure it will be good too! Otherwise I followed directions! SO YUMMY!
