Banana Strawberry Muffins Recipe

Ingredients

  • cup white sugar
  • cup unsalted butter
  • 2 small ripe bananas, mashed
  • 1 egg
  • teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • teaspoon baking soda
  • teaspoon salt (optional)
  • 5 small strawberries, chopped

Directions

  1. Preheat the oven to 350F (175C). Grease 6 muffin cups with cooking spray.
  2. In a medium bowl, combine sugar and butter. Beat with an electric mixer until the mixture is pale and fluffy.
  3. Add the mashed bananas, egg, and vanilla extract to the bowl. Beat for 1 minute until fully incorporated.
  4. Sift the flour, baking powder, baking soda, and salt over the banana mixture. Beat the mixture until just combined. Do not overmix.
  5. Fold in the chopped strawberries gently, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.

Cook's Note: You can substitute the strawberries with 1/3 cup of chopped raisins. This recipe also makes enough batter for 18 mini muffins.
