Banana Strawberry Muffins Recipe

Ingredients
- cup white sugar
- cup unsalted butter
- 2 small ripe bananas, mashed
- 1 egg
- teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- teaspoon baking soda
- teaspoon salt (optional)
- 5 small strawberries, chopped
Directions
- Preheat the oven to 350F (175C). Grease 6 muffin cups with cooking spray.
- In a medium bowl, combine sugar and butter. Beat with an electric mixer until the mixture is pale and fluffy.
- Add the mashed bananas, egg, and vanilla extract to the bowl. Beat for 1 minute until fully incorporated.
- Sift the flour, baking powder, baking soda, and salt over the banana mixture. Beat the mixture until just combined. Do not overmix.
- Fold in the chopped strawberries gently, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.
Cook's Note: You can substitute the strawberries with 1/3 cup of chopped raisins. This recipe also makes enough batter for 18 mini muffins.
