Vegan Chocolate Banana "Pudding"

- 1 cup cooked soybeans
- 2 medium ripe bananas, chopped
- cup water, or as needed
- 1 tablespoon unsweetened cocoa powder
- 2 tablespoons chopped walnuts, or to taste
- medium banana, sliced
Directions
- Place soybeans in a blender and add water gradually, blending until a pudding-like consistency is achieved.
- Add chopped bananas and cocoa powder to the blender, then blend again until fully combined.
- Transfer the mixture into a bowl.
- Garnish with chopped walnuts in the center and arrange banana slices around the edges of the bowl.
Cook's Note
This recipe is quick and easy to prepare if you already have precooked soybeans on hand. However, cooking dry soybeans from scratch does take some time.
