Ingredients

  • cup steel-cut oats
  • 1 (8 ounce) plain yogurt
  • 2 ounces fresh blueberries
  • ounce stevia powder (such as Pure Via)
  • 4 ounces coconut milk

Directions

  1. Start by placing the steel-cut oats at the bottom of a 1-pint Mason jar.
  2. Add the plain yogurt on top of the oats, followed by the fresh blueberries.
  3. Sprinkle in the stevia powder to sweeten the mixture.
  4. Pour the coconut milk over the ingredients and stir well to combine all the elements evenly.
  5. Cover the Mason jar tightly with a lid and refrigerate for at least 8 hours, or overnight for best results.
  6. In the morning, your oats will be ready to enjoy! Simply grab the jar, stir again, and serve.

Date: 5.16.19 I used low-fat Greek yogurt in this recipe and omitted the stevia as the blueberries and coconut milk provided enough sweetness for my liking. This dish is ideal for yogurt enthusiasts, as the tangy yogurt flavor takes center stage, overshadowing the oats and blueberries. It felt more like "yogurt with oats" rather than "oats with yogurt." If I were to recreate this, I would definitely incorporate more oats. Furthermore, the portion size is quite generous for one individual; it could easily serve two people in my opinion. While I appreciate all the ingredients used, I may need to adjust the proportions slightly to better suit my taste. Appreciate the recipe!
