Sous Vide Egg Bites Recipe
This delicious and creamy sous vide egg cup recipe is perfect for a quick breakfast or snack. The soft texture and subtle flavors make it a versatile base for adding various ingredients such as cheese, vegetables, or meats. Here's how to make it step by step:
Ingredients:
- 6 large eggs
- cup cottage cheese
- 2 tablespoons heavy cream
- teaspoon salt
- 6 (4-ounce) mason jars
- 1 serving cooking spray
Directions:
- Fill a large pot with water and place a sous vide immersion cooker into the water. Set the temperature to 170F (77C) according to the manufacturer's instructions.
- In a blender, combine the eggs, cottage cheese, heavy cream, and salt. Blend for 15-20 seconds until thoroughly mixed.
- Spray the mason jars with cooking spray to prevent sticking.
- Divide the egg mixture evenly among the jars, ensuring each jar is filled to about full.
- Screw the lids onto the jars until just barely tightened. Be careful not to over-tighten, as this can cause the jars to burst in the hot water.
- Submerge the jars in the preheated water bath and set the timer for 55 minutes.
- Once the timer goes off, carefully remove the jars and place them on a cooling rack.
- If serving immediately, run a knife along the outer edge of the egg cup and invert it onto a plate. Alternatively, you can eat directly from the jar.
- If not serving immediately, let the jars cool before refrigerating. They will stay fresh for up to 1 week.
Recipe Tips:
- For extra flavor, blend cup of your favorite shredded cheese into the egg mixture.
- You can also add 1 tablespoon of cooked ingredients (e.g., broccoli, ham, or roasted red peppers) to the bottom of each jar before pouring in the egg mixture.
- To reheat, microwave on low power (30%) for about 1 minute, or reheat in a sous vide bath for 10-15 minutes at 150F (65C).

Smooth texture and fantastic flavor! I cooked the bacon sous vide for 24 hours, then finished it off with truffle salt instead of regular salt. I also added a thin slice of butter to each jar. Delicious!

This recipe is absolutely amazing! The first time I accidentally added 2 tablespoons of toppings, but it turned out great and now I do it with most batches. The variety of flavors you can create is endless, making these bites perfect for keeping weekday breakfast meal prep exciting.

Thank you for sharing this fantastic recipe! I love making it in small jelly jars. Sometimes I take a few out early when they're still a bit runny to avoid overcooking when reheated.
