this was a really simple and yummy recipe! i added vanilla like what many reviewers had suggested and it turned out even more delicious. it was just sweet enough for me. but 1 thing to note is really to cook this on a LOW temperature so that the insides of the pancakes gets cooked. it's also less mushy and easier to turn. i learnt this the hard way. the first time i did this i turned the stove on HIGH and the bottom browned really fast. i was struggling to turn it over but the whole thing basically fell apart cos it was still very soft and mushy inside. the bottom ended up black and i had to throw it out and start from a lower temp. other than that it was yummy =) thx for the recipe Andrea

Just a tip for fuss free banana mashing... stick them in a zip-lock bag, zip and squeeze! When you're done cut a corner off and you have a pour spout! I do the same for marinades and everything else of the sort! So much cleaner! And less dishes to boot!

I have found that by measuring the dry ingredients and then putting them through a shifter makes for fluffy pancakes. I also substitute melted butter for the oil, I mix the liquid ingredients including the egg and then add the liquid mixture to the dry and stir to mixed, add two whole banannas and using a potato masher, mush them well. I use 1/4 cup measure per pancake. For thinner add a bit more milk.

My 5-year-old non-verbal autistic son is such a picky eater. Like he literally eats 5-6 things total maybe. But I found that he absolutely loves banana pancakes from scratch. We use 1/2 whole milk and 1/4 cup of heavy whipping cream. We sometimes need to thicken or thin the batter but that easily done with more flower or more milk/cream depending on your preference. Then we add Peanut Butter Chips, as well as 2 Tbsp Brown Sugar in place of the white sugar, a touch of vanilla (2 tsp), we also add about 1/8 cup of maple syrup, oh and we add a 1-2 Tbsp of cinnamon sugar mix. I also separate the Yolk from the Egg White, add the yolk to the mixture as the recipe calls for. Then add 2 more Egg Whites to a bowl and beat them like I would if making meringue, then I fold it into the pancake mix and cook. After they are all cooked, we coat on Butter, Peanut Butter (as much or as little as you want), and Maple Syrup! I hope you enjoy the variations I made.

I've got an 18 month old who loves bananas and I've been questing for the bananiest banana pancake recipe. This is not it, but this forms the foundation of the recipe I now use. Instead of two ripe bananas, I've increased that to around 3 or 4 depending on size. I decrease the milk a bit to accommodate the extra banana liquid. I'll also throw in 1/8 tsp of vanilla for oomph into the liquid. And the coup de gras is I chop up a banana into really small pieces and fold that into the batter after the initial mixing. And that is how I now make my child the bananiest banana pancakes. The banana content is so hi that perhaps they are more like banana fritters at that point, but there's no questioning, no matter how unsophisticated a palate you might have, that what you are eating has banana in it. I hope these adjustments help other parents who find themselves in my situation.

Great recipe and very tasty pancakes! The proportions were spot on. I took a couple of suggestions from others. I used a zip lock freezer bag to mash the bananas…put them all in the bag, took the extra air out, zipped the bag, and kneaded them until they were mushy… then cut a corner of the bag and poured the bananas out into the liquid mixture. I also added 1/4 tsp of vanilla. As with any pancake mixture that sits for a bit, I periodically added a smidge of milk so that it wouldn’t get too thick.

Made these this morning. I thought they were good and no complaints from the family which was a big plus. For me, next time I make them, I will use only 1 banana and 1/2 cup more flour. It’s just a preference thing. I added vanilla which is only addition I made to it. Overall, a good recipe. ( ps… I also used ziplock for mashing…good tip, ty) July 15, 2024…. Made these again today. Did adjust the recipe as stated above in my original review. I added 1/2 cup of flour, used only 1 banana, added vanilla plus a couple teaspoons of cinnamon. These turned out perfect and definitely a 5 star recipe. I will continue to use this one with my changes when the craving hits for pancakes!

Excellent recipe; straightforward and basic, which allows room for some experimentation - but the basic recipe outlined here results in the Banana Pancakes that I was looking for. I add a half tsp of vanilla extract and a dash or two of cinnamon; I also put blueberries in the Cakes as they are on the griddle. 👨‍🍳 💋 chef’s kiss, my favorite breakfast. (also, if you like bacon, cook bacon in the pan and use the grease to fry your pancakes for an extra delicious {albeit greasy} crust) 😋

I love this recipe it is so delicious and easy to make. When I make it I usually mash the bananas first in the bowl to use less dishes. It is perfect also if you add cinnamon and turmeric it makes it more flavourful, and it's amazing with maple syrup.

I doubled this recipe but reduced milk by 3/4 cup, so instead of 2 cups of milk, I added 1 1/4 cup of milk. After reading reviews about it being overly mushy, I reduced the milk. Came out perfect.

I made this for the first time and it was aaaaaaaamazing!! I tweaked the recipe used about 3/4cup of milk, butter instead of oil, used 1/8 teaspoon salt and the pancakes came out fluffy and delicious !! 👍🏽👍🏽

These were super thin and disappointing. Never in my days have I made pancakes that were so thin that a piece of paper would be jealous. Also, the batter was so runny that a sunny side up egg would lust over it's flowing ability. 10/10 DO NOT recommend.
