Gluten-Free Pancakes

Yields: 8 servings

Ingredients

  • 1 cup all-purpose gluten-free flour
  • teaspoon gluten-free baking powder
  • teaspoon salt
  • teaspoon ground cinnamon
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • cup cold milk (or more as needed)
  • Cooking spray

Directions

Step 1: Gather all ingredients.

Step 2: In a bowl, whisk together the gluten-free flour, baking powder, salt, and cinnamon until evenly combined.

Step 3: In a separate bowl, whisk the egg, vegetable oil, and vanilla extract together until smooth.

Step 4: Gradually add the dry ingredients into the wet mixture, stirring with a wooden spoon until just combined. The batter should still be lumpy.

Step 5: Slowly add the cold milk, stirring until the batter becomes smooth. Let it sit for 5 to 10 minutes to thicken. If the batter is too thick, stir in more milk, one tablespoon at a time.

Step 6: Preheat a griddle or skillet over medium-low heat and lightly spray with cooking spray.

Step 7: For each pancake, drop 1 to 2 heaping tablespoons of batter onto the griddle. Cook for about 3 to 4 minutes, or until bubbles form on the surface and the edges start to dry.

Step 8: Flip the pancakes and cook for an additional 2 to 3 minutes, until golden brown.

I had been searching for a simple gluten-free cinnamon pancake recipe, but all Google showed me were overly sweet cinnamon bun pancakes, until I stumbled upon this gem. The pancakes were delicious, but the recipe lacks any sweetener. I suggest adding 5-6 tablespoons of sugar or a sweetener to prevent them from tasting salty.

To improve it, I tried to enhance the texture by adding an extra 1/2 tsp of baking powder, 1/2 cup of milk, and an egg. With these modifications, it became edible, though still not impressive. I suggest using standard pancake recipes and substituting with all-purpose gluten-free flour, as that usually yields better results for me.

The pancakes turned out dense and lacked fluffiness, which may have been due to the flour I used, Bob's 1 to one. Typically, when I use Bob's flour, the texture is good, so I was surprised by the result this time. Additionally, the pancakes didn't rise much, and after comparing the recipe to another one, I realized that the amount of baking powder was four times less than what was recommended.

Unfortunately, the outcome was disappointing. It seems like my baking powder wasn't effective...perhaps using two eggs would have helped? I spent a long time whisking the egg to ensure it was fluffy, but despite cooking for a long period, the end result was still doughy. There wasn't even any bubbling during the cooking process. In the end, I had to discard the batch :(

Avoid making these pancakes. The batter is too thick and requires more than half a cup of milk. Also, gluten-free flour is expensive, so I regret wasting money on this unpleasant pancake recipe.
