Ultimate Cowboy Caviar Recipe
Everything in here is to taste, and at some point youll probably want to play around with the amounts and come up with your own ultimate formula, but until those experiments conclude, this cowboy caviar, made exactly as is, should do very nicely. If you make this ahead, be sure to stir it often, so everything gets evenly soaked in the dressing. Also, make sure you have plenty of chips around, or be prepared to hand out spoons, since this is always a huge hit, and I really do hope you give it a try soon. Enjoy!
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
Original recipe (1X) yields 14 servings
Dressing:
- 1/3 cup avocado oil or other vegetable oil
- 1/3 cup seasoned rice vinegar
- 1 lime, juiced
- 3 cloves garlic, minced
- 1/4 teaspoon garlic powder
- 1 teaspoon salt, or to taste
- 1 teaspoon white sugar
- 1 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chipotle pepper, or to taste
Caviar:
- 2/3 cup finely diced red onion
- 1 cups diced fresh bell peppers
- 1/3 cup diced jarred roasted red peppers
- 1/3 cup diced pickled jalapeo peppers, or other pickled peppers
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can black-eyed peas, drained and rinsed
- 2 cups frozen corn
- 1 cup diced fresh tomato
- 1/2 cup chopped fresh cilantro
- Scoop-style tortilla chips for serving
Directions:
- Whisk avocado oil, rice vinegar, lime juice, garlic, garlic powder, salt, sugar, cumin, paprika, and chipotle together in a large bowl and set aside until needed.
- Rinse diced onion well under cold water and drain thoroughly. Add the diced onion to the dressing mixture.
- Add the diced bell peppers, roasted red peppers, pickled jalapeos, black beans, black-eyed peas, frozen corn, and diced tomato to the bowl of dressing.
- Stir well to combine. Cover the bowl and refrigerate for 2 to 12 hours, tossing occasionally to ensure the flavors meld.
- Before serving, stir in fresh cilantro. Taste and adjust seasoning with salt, if needed.
- Serve with tortilla chips and enjoy!

- Fresh, roasted, or grilled corn can be used instead of frozen.
- Half parsley and half mint can be used instead of cilantro, and canned diced tomatoes can be used instead of fresh tomatoes.

I typically enjoy Chef John's recipes, but this one didn't hit the mark for me. The vegetables were good, and I added a finely minced fresh jalapeno along with the pickled jalapenos. I followed the recipe closely, which is unusual for me. However, there was too much oil in the dish. Using half the amount would have been more suitable. The overall sauce quantity was excessive. After a few hours, I strained the caviar and ended up with nearly a cup of sauce, leaving the veggies still oily. I took out the tomato seed sacks and placed the tomatoes on paper towels to absorb excess moisture. In the end, the sauce tasted more like a subpar salad dressing. I've had and made better cowboy caviar before. Apologies Chef John, this one wasn't a favorite of mine.

My daughter and I whipped up this dish last night, and now we can't get enough! Even with the smaller batch, it makes plenty of servings. I'll be enjoying this for lunch all week at work. This dish was amazing! I made a few adjustments. I roasted the red and green peppers myself. Oh my goodness ... this dish was absolutely delicious! It was also super quick to make. I didn't have chipotle pepper on hand, but I followed the recipe exactly otherwise. I used frozen fire roasted corn. I prepared it in the morning and enjoyed it a few hours later. I was worried it would be too much for just the two of us, but we finished it in two and a half days.
