  • 3 tablespoons rice vinegar
  • teaspoon ground Sichuan pepper (optional)

Directions

Step 1: Cut the chicken into pieces about 1 to 1 inches in size. Add them to the bowl of a food processor.

Step 2: Add the breadcrumbs, salt, paprika, black pepper, cayenne pepper, garlic powder, and 1 tablespoon of vegetable oil to the food processor. Pulse until the mixture is finely ground but still slightly textured (not a smooth puree).

Step 3: Scoop 2 tablespoon-sized portions of the mixture onto a sheet pan, creating a total of 24 portions. Cover and chill in the refrigerator for about 30 minutes.

Delicious- there is a MISPRINT on the recipe- if not using Self-Rising flour you add Baking POWDER to the flour, as Chef John said on his video. Was not a mistake by Chef John, was by the transcribers, FYI

I didn't expect the sauce to be as sweet as it was. I'd make it again, but I'd probably cut the honey in half and add more rice vinegar and sriracha.

I made this for my husband and two teens; it was a success! One teen, who doesn't like most chicken, said, "This is good!" I left the cayenne out of the chicken mixture because my other teen is sensitive to spice, but I think I may add some of it next time. Great recipe on its own and can be easily tweaked for any other kind of chicken nugget flavoring. I would personally recommend leaving the nuggets unsauced before serving or for storage. They also make a phenomenal Banh Mi filling and the sauce works well as a spread. Will definitely make again.
