Easy Peanut Butter Energy Balls Recipe

Ingredients

Original recipe (1X) yields 24 servings

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1 cup crushed walnuts
  • cup semisweet chocolate chips
  • cup honey (or more as needed)

Directions

  1. Beat the oats, peanut butter, walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment until everything is well combined. If the mixture is not holding together, add more honey until it does.
  2. Scoop the mixture with a cookie scoop and form into 24 balls. Place them on a cookie sheet.
  3. Refrigerate the balls until they are firm, about 30 to 60 minutes.

Cooks Note

If you prefer, use a bigger scoop to make 12 larger energy balls. Feel free to experiment with the recipe by adding ingredients like M&M's, dried cranberries, flax seeds, hemp powder, protein powder, chia seeds, coconut shavings, coconut oil, or almond butter.

This recipe is so easy and tasty. Just rolled them in coconut for colour and we are 3 adults and they didn’t last 3 days. Will make them again for a healthy snack..

The café at my workplace sells Energy Balls 3 for $3.99, and I doubt it cost me even that for the 2 dozen I just made! And mine were even better! The only exchange I made was instead of walnuts I added about 1/3 cup sweetened coconut shreds and a tablespoon of hemp hearts. The chocolate chips were minis. I did need to double the honey to make them hold together. It took practically no effort nor time at all to mix these in my Kitchenaide stand mixer and to roll them up into 24 yummy morsels.

Absolutely terrific! I added 1/2 Cup Honey as well as 1/4 Cup Shredded Sweetened Coconut and 1/3 Cup Dried Cranberries. Amazing!

I mixed 1/4 cup honey with 1/4 cup maple syrup - otherwise the batter wouldn't stick together. I used my medium size cookie scoop and only got 20 balls. If you want 24, use a small size cookie scoop (1/4 cup size.)

This are excellent little energy bites! I usually add what I have and then roll in oatmeal, coconut, or left over crushed cereal. I also wrapped them individually in wax paper, place in a zip lock bag, and pop them in the freezer. A great little "go to" item when you need a quick pick up snack until you can eat a meal.

I used peanuts instead of walnuts. I also added 1/4 cup chia seeds and 1/4 cup flax seeds will need to up honey and peanut butter

I did 4 cups of peanut butter and 8 cups of oats like the recipe calls for, and I found that it was just too oat-y… I decided to add an extra 2 cups of peanut butter, and it worked a lot better especially if you want to add things like protein powder. So I would say that if you are making a bigger batch, put more peanut butter in.

I really like this recipe, will definitely make it again. It could definitely taste the peanut butter, but I might just add less next time. Would recommend making.

Quick and easy to make. Healthier snack resemblance to Reece's cups if you use oat flour and semi sweet chocolate chips.

i added sunflower and pumpkin seeds. should have added more peanut butter to bind them together a bit more. tasted delicious!
