How to Make Scalloped Potatoes

Ingredients for Scalloped Potatoes

  • 3 pounds russet potatoes, thinly sliced
  • onion, thinly sliced
  • 9 tablespoons all-purpose flour, divided
  • 6 tablespoons butter, cubed and divided
  • Salt and ground black pepper to taste
  • 3 cups whole milk, or as needed

Directions

Step 1: Preheat the oven to 375F (190C) and grease a 9x13-inch baking dish.

Step 2: Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices.

Step 3: Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons cubed butter atop the flour. Season the entire layer with salt and pepper.

Step 4: Repeat layering twice more, adding the remaining potatoes, onions, flour, butter, and seasoning.

Step 5: Heat the milk in a saucepan over medium-low heat until warm. Pour enough warm milk over the mixture in the baking dish so that the top of the liquid is level with the final layer of potatoes.

Step 6: Bake in the preheated oven for 45 to 60 minutes, or until the potatoes are tender, and the creamy sauce is bubbling with a golden brown crust. The cream sauce may bubble up over the sides of the baking dish, so place a baking sheet underneath to catch any drips.

Step 7: Serve hot and enjoy!

I can't believe it! This is my Dad's scalloped potatoes recipe. He died when I was 11, (I'm 58 now) but one of my fondest memories as a little girl was sitting at our kitchen table together and him teaching me how to make this recipe. No measurements were used, just peeling and slicing the potatoes and onions and layering in the casserole dish with sprinkled-on flour, small pats of butter, salt and pepper (on each layer), then pouring milk on top just until it peeked through the potatoes at the top. Sometimes he put pork chops on top before baking. Best scalloped potato recipe ever! (Miss you Dad).

I make a roux (using the butter and flour), add it to the warmed milk, and season the cream sauce with the salt and pepper. I layer the potatoes and onions to the nearly the top, slowly add the cream sauce till just even with the top row, and bake for an hour. Same ingredients, but a with a consistent cream sauce and great taste every time.

I grew up eating scalloped potatoes this way and I've tried lots and lots of other recipes for scalloped potatoes and always come back to this. They bring back such good memories. If I have ham I put ham in also for a complete meal and just add a vegetable. This is the way scalloped potatoes are meant to be!

Just want to make a comment...don't try to do this with low fat milk. It will not hold up in the baking....

I followed directions, like I always do the first time....but missed the part about sprinkling flour on the potatoes. 🙄 I put it in the milk and whisked it. It made a lovely thick sauce and was delicious. My onion hating family even ate it without complaints! Potatoes/onions/creamy milk... How could it go wrong.... Thanks for the recipe!!

Perfect classic scalloped potato recipe. I cooked mine longer than the recommended time until the potatoes were golden brown. Made meatballs out of grandma's meatloaf recipe and cooked them with the potatoes. Meatloaf 1 lb hamburger 20 saltine crackers 1 egg 1/2 pkg Lipton onion soup mix 1/2 cup milk Mix all ingredients with hands and make meatballs and pan fry until cooked. Yum!

Good recipe, I make this but find it easier to melt butter in saucepan, add flour, when thickened add milk and seasonings, when that is thickened layer potatoes, onion and sauce. Not so much to layer. I make this after Easter and add a layer of chopped ham.

Super easy and tasty. The only change I did was to add the flour to 1/2 cup of cold milk and mixing it well. Heat the 2 1/2 cups of milk as instructed by the recipe Then adding the warmed milk to the cold milk and layering it in between the layers. It turned out beautifully

I made a roux as others suggested and it was fantastic. I baked longer than the recipe called for. More like 90 min and broiled at the end to get it more crunchy on top.

I made a roux from the butter, flour, and milk, then layered it with the potatoes. I sautéed the onions before adding them. A nice addition is kielbasa that has been sliced into rounds and browned.
